SWEET COCONUT MILK FOR APPAM/IDIYAPPAM
I know two beautiful people who can write off their will for this heavenly Combo - Appam & Sweetened Coconut Milk. One is my MIL and the other person is my friend Santhini. I learnt that Santhini loves this combo during one of her visits. I had made Appam, Chicken Curry & Stew. But she asked whether I can make Sweetened Coconut Milk for her and serve Appam with Brown Sugar. Since then, whenever possible I try to make this combo when she visits us. KARIKKU APPAM - TENDER COCONUT APPAM
Appam is one favourite dish among Malayalees. Right from a Breakfast scene to an elaborate party scene you can see an Appam served in the menu. So is the love for an Appam for Keralites. Needless to say it serves as a default Breakfast Menu on a Christmas & Easter day, in most of the Kerala Christian Households. Mostly served along with the ever knotted combo of Stew or an Egg Curry with Coconut Milk or any vegetarian/non-vegetarian side dishes of your choice. Or simply serve it along with Red Coconut Chutney, sweetened Coconut Milk or with Sugar/Brown Sugar. Some even serve Appam along withSteamed Bananas/Nendhra Pazham Puzhungiyathu The Side dishes served along with an Appam gets vivid with taste & preferences.
RAVA APPAM - INSTANT SEMOLINA APPAM
Well, this recipe is a quick fix - an instant Appam recipe which needs no soaking, no fermentation and it will be ready within 15 minutes. Appam is a traditional South Indian lacy pancake prepared with Raw Rice and Coconut. And it needs to be fermented for at least 8-10 hours/overnight. But this Rava Appam is a simple recipe prepared with White Semolina, few spoons of All-Purpose Flour, Instant Yeast and a bit of Salt & Sugar. Add everything into the blender jar and grind it into a smooth paste adding LUKE WARM WATER little at a time. Luke Warm Water helps to activate the yeast and also facilitates fermentation process.

Not only that it is served as a breakfast dish, but it also takes a special place in most of the Festive Menu List. A day of importance/special occasion in a Christian household, surely calls for Appam & Stew in the menu.
Writing my 400th blog post, I had no clue what recipe to feature. But as inspiration struck, I found myself drawn to a traditional dish I had long wanted to perfect – Pesaha Appam and Pesaha Paal. After multiple trials and errors, I finally mastered this Sacred Passover Bread, and without wasting a moment, I captured the perfect shot and began crafting this post. The quality of the rice plays a major role in soft textured Idiyappam. Raw Rice suits well for making Idiyappam flour. Preparing Rice flours for Puttu/Idiyappam/Appam is a common task in a South Indian kitchen. Though preparation of each flour is slightly different, the basic ingredient i.e the Rice remains the same. Usually, a large batch of Rice flour is prepared and stored for later usage. Well prepared and perfectly stored homemade Idiyappam flour stays good for up to 3 months.
