    However, Traditional royal icing relies heavily on egg whites or meringue powder, which often left me searching for a better alternative. After years of experimenting, I finally perfected a Vegan Royal Icing or simply Eggless Royal Icing, in my terms, delivers the same glossy finish and firm set—without eggs, meringue, or any substitutes that mimic them.

    For those who, like me, prefer a simple yet effective recipe, this one is a game-changer.     Are you tired of royal icing that tastes overwhelmingly eggy? I was too! After countless experiments, I’ve finally nailed the perfect vegan royal icing—one that’s silky, pipeable, and sets beautifully without a single egg or egg substitute like meringue powder in sight.  Or simply if you are in search of Vegan Cake or Cookie Decoration, then you have landed into the right recipe here.

    This simple recipe uses just three ingredients and works wonderfully for cakes, cookies, and decorative piping. Bonus? No more raw egg worries! This is the best Vegan Icing in my terms.

Confectioners' Sugar or Normal Sugar?

    While both normal powdered sugar and confectioners' sugar work well for this recipe, I have used Icing Sugar here for a smoother texture. But if you don’t have it on hand, you can powder and sieve regular white sugar—it works just fine!

One other ingredient I’ve added to the icing is Lemon Juice, which helps avoid crystallisation of sugar and also helps to harden the icing once set.

    The trickiest part is getting the royal icing to land on the cakes in the perfect consistency. Sometimes, we might need more water; sometimes, it needs less. But the wonderful thing is that you can manipulate the icing to get the proper consistency by adding more water or more Sugar.  Just keep in mind to add water in drops, though! It’s awesome! So, you see—no strict rules, yet it is a foolproof recipe. I know why I love this royal icing recipe.

• 2 cups (250g) Icing Sugar (sifted)
• 3–5 tablespoons (45–75ml) Cold Water (adjust for consistency)
• 1/2 teaspoon (2.5ml) Glycerine (optional – keeps icing soft, skip for a firmer set)
• 1 teaspoon (5ml) Lemon Juice or Aquafaba (optional – helps with structure and setting)

Note: Start with 3 tablespoons and add the remaining water drop-by-drop until it reaches a thick, ribbon-like consistency that coats the back of a spoon.

    Achieving the perfect egg-free royal icing is all about the right consistency. Follow these steps to make a silky, smooth, and glossy icing that’s ideal for decorating cakes, cookies, or festive bakes!

Step 1: Sift the Icing Sugar

• Begin by sifting the icing sugar into a clean, dry mixing bowl. This helps remove any lumps and ensures a super smooth texture in the final icing.
  

   

  Pro Tip: If your icing sugar is particularly clumpy, sift it twice for an extra-fine finish!

Step 2: Add Liquid Ingredients

• Start by adding 4 tablespoons of water and your choice of lemon juice or aquafaba (if using).

  Pro Tip: Do not over-whisk. We want to incorporate the liquids gently to avoid air bubbles. If you see a bubble, prick it with a toothpick immediately.

• Stir well using a spoon or spatula until the mixture becomes smooth and lump-free.

  Pro Tip: Lemon juice helps balance the sweetness and adds a subtle tang, while aquafaba enhances the icing’s structure—making it a great choice for intricate decorations.

Step 3: Add Glycerine (Optional)

• If you want a soft-set icing (perfect for cookies), mix in a few drops of glycerine.
• If you prefer a hard-setting icing (ideal for intricate decorations that need to hold their shape), skip the glycerine.

   

  Pro Tip: A hard-set icing is best for decorating Christmas cakes or wedding cakes, while a softer one works well for cookies that need a bit of chew.

Step 4: Adjust the Consistency

This is where you fine-tune your icing depending on its purpose:

• For thicker icing (best for piping & details): Add more sifted icing sugar, a tablespoon at a time, until you reach a stiff but spreadable texture.

• For runnier icing (ideal for glazing cakes/cookies): Add a few drops of water at a time and stir well until you achieve a smooth, flowing consistency.

   

  Pro Tip: If you’re decorating cookies, use a thicker icing for outlining and a runnier version for flooding the inside—it creates a flawless professional finish!

Step 5: Beat Until Glossy

• Once you’ve reached the desired consistency, use a whisk or electric mixer to beat the icing for about 1 minute until it becomes smooth, glossy, and easy to spread.

   

  Pro Tip: Overmixing can introduce too many air bubbles, so mix just until the icing looks silky and shiny. If bubbles form, gently tap the bowl on the counter to release them.

• If using right away, spread or pipe the icing onto your cake or cookies.
• If storing, cover the bowl with cling film (touching the surface) to prevent a dry crust from forming.

   

  Pro Tip: Royal icing dries quickly! Always keep it covered while working, and if it starts to thicken, add a few drops of water and stir to bring it back to the right consistency.

• Classic royal icings are made with meringue powder, but this version is slightly harder, just like the ones found in our local bakeries in Coimbatore & Kerala.

For my family, this isn’t just baking—it’s a legacy steeped in culture and tradition.  Making Christmas Fruit Cake, also known as Rich Fruit Cake or Kerala Plum Cake, is more than just a recipe in our household — it’s a heartfelt tradition. Married into a Christian family with roots in the culturally rich Cochin - Fort Cochin, influenced by Portuguese heritage, I embraced this legacy with open arms. Being a devoted daughter-in-law, I strive to perfect family recipes, ensuring they are preserved for the next generation. • Homemade Christmas Goodies: Months before Christmas, I begin making essential goodies such as:

  • Tutti Frutti
  • Candied Fruits and Peels
  • Candied Ginger
  • Orange Marmalade

• Soaking the Dry Fruits: This is a crucial step for achieving the rich flavour of the cake. I soak an assortment of dry fruits in my homemade Raisin Wine/Grape Wine (sometimes Rum) at least three months before Christmas. These fruits are refrigerated and ready whenever needed. For example, I baked a Rich Fruit Cake for my son’s birthday in July using fruits soaked for nearly a year!

• Caramel Syrup and Nuts: I prepare caramel syrup and chop nuts a day or two before baking to ensure freshness and consistency.

The Spotlight: Royal Icing

    After much trial and error with eggy-tasting icings, I’ve perfected a Royal Icing recipe that’s both simple and delectable. Inspired by the standards of Indian bakeries, this icing is:

• Initially flowy for easy pouring and smooth application.
• Slightly hard when set, yet melts in your mouth.
• Full of flavour, perfectly complementing the rich cake beneath.

What is Royal Icing?

Royal Icing requires just 3 ingredients:

• Confectioners’ Sugar
• Meringue Powder or Egg Whites
• Water

But my recipe adds a twist! Here’s what makes it special:

• Egg Whites: Don’t worry about raw eggs; we’ll heat-treat them for safety. Use pasteurised eggs if needed.
• Lemon Juice: Prevents sugar crystallisation and helps the icing set firmly.
• Customised Sweetener: No need to hunt for confectioners’ sugar; simply use sieved powdered sugar.

How to Heat Treat Egg Whites?

     While this step is NOT necessary to making royal icing, it’s a good method to know when working with raw egg whites. To heat treat the eggs, cook them in a bain-marie* over low heat for 2-3 minutes, whisking constantly. Alternatively, you can simply cook this on a very-very low flame.

    Do this just until the egg whites have become warm, but are not hot. This will kill any potential bacteria in the eggs, making them safe to use when raw, and with the addition of the lemon juice, you’ll be as safe as can be! If you don’t want to use egg whites then go ahead with meringue powder.

    *A bain marie (ban mah-REE) is the fancy term for a hot water bath.  It is cooking delicate dishes over a hot water bath or an intricate way compared to double boiling.

Confectioners' Sugar/Normal Sugar? 

    And again I am doing this Icing with the normal White Sugar, powdered and sieved (no need to go search for confectioners' sugar).  And one other ingredient I have added into the Icing is the Lemon Juice, which helps avoid crystallization of Sugar and also helps to harden the Icing once set.

    The trickiest part is making the Royal Icing to land up on the Cakes in the perfect consistency.  Sometimes I need more water, sometimes I need less water. But the wonderful thing is that you can manipulate the icing to get the proper consistency by adding more water or more confectioners’ sugar/powdered white sugar. • Keep the flame at its lowest setting.(The idea is to just heat treat the Royal Icing Mixture and not cooking).

Step 2: Heat Treat Gently

• Stir continuously to avoid cooking the egg whites.
• Gradually, the mixture will loosen; add 1 teaspoon of water if needed.

Step 3: Final Adjustment

• Repeat adding water (up to 6 teaspoons total) until the mixture is slightly flowy but not watery.
• Remove from heat once the icing reaches the right consistency and is warm to the touch.

Pro Tip: Do not overheat or boil the mixture, as this can ruin the texture of your royal icing.
