    Black sticky rice and Kavuni Arisi belong to the same family of rice varieties, but have subtle differences depending on the region of cultivation and use. Black sticky rice, commonly used in Southeast Asia, has a similar texture and nutritional profile. Some varieties of black sticky rice are now grown in India, including Tamil Nadu and the northeastern states, as awareness and demand increase.

• Cultivation in South India: Certain regions in Tamil Nadu cultivate Kavuni Arisi, while its close relative, black sticky rice, is widely grown in the Northeastern parts of India.

• Prepare the Ingredients: Start by finely slicing the big onions lengthwise. Dice the potato into small pieces, and chop the tomato, setting it aside for later.
• Coconut Paste: Grate 4 tablespoons of coconut. In a grinder, blend the coconut with 1 tablespoon of Pottukadalai, dry red chillies, and fennel seeds until you achieve a smooth and fine paste.
• Sauté the Aromatics: Heat oil in a pressure cooker. Add Cinnamon, cloves, and fennel seeds to the oil, frying them briefly over a low flame. Add a spring of Curry leaves and then add the sliced onions and sauté until they turn translucent.
• Add the Essentials: Sprinkle a touch of turmeric powder and stir quickly. Incorporate the finely chopped tomatoes, cooking them gently until they become soft and fully cooked.
• Infuse the Potatoes: Add in the diced potatoes, along with a dash of salt for taste. Pour in the coconut paste, ensuring a thorough mix of flavours.
• Pressure Cook to Perfection: Cover the pressure cooker and let it cook over a medium-low flame for one whistle. Turn off the heat and allow the pressure to release naturally.
• Garnish and Serve: Sprinkle a generous handful of fresh coriander leaves over the Vengaya Kosu for that final touch of freshness. Pair it with those heavenly idlis, dosas, or uttapams, and voilà – a feast fit to satiate your senses!

    Well, we all might have wonderful anecdotes when it comes to a dish - the King of all Dosas, the one & only Masala Dosa.  My story and memory goes like this...

    Join me on this delectable journey as I relish the nostalgia intertwined with family bonds, travel tales, and a sprinkle of secret indulgence. The happiness of travelling & the anticipation of returning home from our brief trip to our Native Place in Palaghat, is always lined with a slight weariness of travel, and the looming threat of a mundane dinner - Kanji or Upma - a quick fix, my mother could cook up after a long day. Then, me imaging and wishing the scenario to change into my liking.  Secretly wishing that my Dad should suggest eating our dinner at Annapoorna Gowrishankar.  My imagination running wild, making the eatery as a culinary superhero swooping in, turning ordinary bus rides into gastronomic escapades. Though such suggestion to dine out is a rare-rare event in our modest middle-class haven.

    And at such magic moments, I secretly enjoy in my Clandestine Culinary Pleasures, though the menu would be fixed by my Dad and what I eat would always be his option.  Maybe he thought I was a kid who would not have an idea what to order from the long list of dishes they cater, and that was true to an extent.  At times getting my favourites like Chole and Peas Curry or Lemon Sevai and mostly with Paper Roasts a popular, but a monotonous restaurant dosa (for my liking).  And at times Masala Dosa appeared in front of me.  The mystery of his order  & the unspoken delight of savouring the flavours, I was too scared to express my likings openly – whatsoever, the indulgence of eating in a restaurant stays forever as an exquisite childhood memory.

    But my relationship with masala dosa is complex, especially when it comes to those elusive potatoes. While the world swoons over them, I proudly stand as the rebel who defies the love for spuds. My Potato Predicament, was taken over by love, love for my husband and his love for Masala Dosas!!! And here I am, crafting Masala Dosas at home for the hubby.  A frequent endeavour to satiate his ever wanting desire for Masala Dosas.

    Ah, the Masala Dosa Chronicles from my husband's past are absolute gems! Let's slightly rewind back to the days when parents banned hotel food like it was contraband (yes, we're talking about the groovy 70s), his dad had a stealthy trick up his sleeve. He'd sneakily tuck hot masala dosas inside his shirt. The result? Scalding pink chests – a testament to a dad's love, willing to brave the heat for his kiddos.

    And another Masala Dosa tale goes with the grandeur of his grandfather, Every trip to Cochin was a masala dosa celebration from Cochin Cafe. His grandpa, with a flourish of hands, would ask, "Who's up for some masala dosas?" It's a memory etched in time, a delicious legacy from his mother's father, still fondly remembered by my hubby.

    So, there you have it – a sneak peek into the daring dosa capers and the grand gestures of love that flavoured my husband's culinary upbringing. Ah, the things we do for the love of masala dosas and for our loved ones!

Masala Dosa: A Crispy Delight from the Heart of South India

For Dosa Batter:

Dosa Batter

    Explore the art of crafting the perfect dosa with this detailed guide on making traditional Dosa Batter or a simpler Dosa Batter made in Mixer Grinder.  Click the links for the step-by-step recipe, ensuring your dosas are a crispy masterpiece every time.

    Prepare Dosa Batter following the instructions from this link for making the perfect Dosa Batter & allow the batter to ferment, giving it that wonderful airy texture.

Ingredients:

For Potato Masala:

• 4 large Potatoes, boiled and mashed
• 1 teaspoon Mustard Seeds
• 1 teaspoon Bengal Gram Dhal 
• 1 Dry Red Chilli
  
• 1 teaspoon Cumin Seeds
• A pinch of Asafoetida 
• A Sprig of Curry Leaves
  
• 1 large Onion, finely chopped
• 2-3 Green Chillies, finely chopped
• a small piece of Ginger
  
• 1/2 teaspoon Turmeric Powder
• 1 small Tomato
  
• Salt to taste
• 1 teaspoon Lemon Juice
  
• 2 tablespoons oil
• a few Coriander leaves for garnishing

Method:

Potato Masala:

• Clean, wash & boil the Potatoes (skin on), along with a dash of Salt, in a pressure cooker.
• Pressure cook the Potatoes on a high flame for 2 Whistles, reduce the flame and cook for another 2–3, whistles.
• Switch off the flame and wait until the pressure is released.
• Once the Potatoes are cooked, allow it to cool down.
• Peel the Potatoes and mash it up roughly. (The idea is to crumble it and not mash it as we do for Mashed Potatoes).
• Heat Oil in a Pan, splutter Mustard Seeds, Bengal Gram Dhal, Red Dry Chillies and Curry Leaves.
• Add finely chopped Onions, Ginger and Green Chillies (slit into two) to the above and sauté until Onions turn translucent.
• Add Turmeric Powder and give a quick stir.
• Immediately, add finely chopped Tomatoes and cook until tomatoes turn soft.
• Cook this mixture on a very low flame until oil separates from the mix.
• Add roughly mashed Potatoes to the above along with a dash of Salt and mix well.
• Sprinkle some water and allow the mixture to boil on a low flame for a few minutes.
• Pour a teaspoon of lemon juice to balance the taste. Adjust the consistency of the Poori Masala/Potato Masala to suit your preference.
• Add a pinch of Sugar and garnish the Poori Masala/Potato Masala with finely chopped Coriander Leaves.

Masala Dosa: A Crispy Delight from the Heart of South India

Masala Dosa:

• Heat up the Dosa Griddle on high heat and then gracefully lower the flame to medium-high.
• Bestow a thin layer of oil upon the Griddle's surface. Employ an Onion Slice of a clean cloth to spread the oil like a seasoned artist.
• Plunge your ladle into the Dosa Batter, giving it a thorough mix. Pour out a generous ladle of this dosa batter onto the cente of the hot Dosa Griddle.
• Then gracefully, spread the batter evenly across the expanse of the Dosa Griddle in a circular motion to form a thin, even layer. Swirl it up well until the edges of the dosa griddle.
• Keep the flame at a steady medium while these Dosas cook. It's the sweet spot for achieving that perfect balance of crispiness and golden allure.
• Drizzle a few teaspoons of Oil or Ghee over the Dosas.
• Wait as the Dosas turn crispy and adorn a delightful golden-yellow hue. There's no need to flip; the heat of the griddle does its work, ensuring perfection. 

Filling and Folding:

• Place a generous spoonful of the prepared potato masala in the center of the dosa.
• Fold the dosa from both sides, creating a roll or a semicircle, encasing the potato masala inside.
• Roll out these crispy Masala Dosas from the Dosa Griddle. 
• Serve the Masala Dosa hot, accompanied by sambar and coconut chutney.

NOTES & TIPS FOR PERFECT MASALA DOSA:

Potato Masala:

• Boil potatoes until fork-tender for a smooth and easy-to-mash texture. This ensures a velvety consistency in your masala.
• Adjust the spice levels in your masala to suit your taste buds. An extra green chilli or a small pieces of ginger can elevate the flavour without overwhelming.

Fermentation:

• The batter's texture should strike a balance, neither too thick nor too thin.
• Allow the dosa batter to ferment until it reaches a light, airy consistency. This step is the secret to achieving the perfect dosa texture.

Seasoning the Dosa Griddle:

• Before pouring the batter, rub the dosa griddle with an onion slice. This imparts a subtle yet distinct flavour to your dosa.
• Ensure the dosa griddle is well-heated before pouring the dosa batter for that perfect golden crispiness.

Crispiness:

• For an extra crunch, let the dosa cook a tad longer on medium heat. The edges should reach that delightful golden crispiness.
• Swirl the batter in a circular motion for a thin, even spread. The dosa should be like a thin lace and should not be heavily laden.
• Use ghee for a rich flavour or a mix of oil and ghee for the perfect balance. Drizzle it judiciously for that golden finish & extra richness.

Adventurous Accompaniment:

• Experiment with various chutneys and sambar combinations. 
• A subtle coconut chutney or a spicy tomato chutney can take your masala dosa to the next level.

• Let's begin with the meticulous process of Washing the rice, dal, and fenugreek seeds thoroughly and soaking them in water for 3–4 hours.
• Drained and ground into a thick paste, adding minimal water.
• Then the batter undergoes a gentle fermentation for 6–8 hours, transforming it into a canvas of flavour.

Karupatti Syrup:

"Explore the golden richness of Karupatti, the natural sweetener from palm trees."

• Boil water and add palm sugar. Stir until melted, then strain the syrup.
• Add cardamom powder, dry ginger powder, and let it cool.

Combine Batter and Syrup:

•  Mix the cooled syrup into the fermented batter. Adjust consistency with water if needed. The batter should be thick. Add salt and mix well.
• The combination of the ingredients & the sweetness, when combined with the fermented batter, create a harmonious blend that tantalizes the taste buds. 

Cook the Appam:

• Heat a pan on a low flame. Pour a ladle of batter in the centre.
• In the traditional method, it's made without spreading. However, my Kerala-style Appam instincts led me to desire a visual blend of lacy edges and a thick, spongy centre.
• Cover and cook on a low flame for a few minutes, until it transforms into a golden delight
• Open the lid, spread a dollop of butter, and serve it hot.

"Fluffy & Crispy Madurai Karupatti Appam"

Notes:

Choice of Rice:  Opt for regular parboiled rice or Idli rice for the batter. You can also experiment with a combination of parboiled rice and raw rice for a unique texture.

Batter Consistency:  While grinding the batter, aim for a thick consistency. The batter will later be diluted with the palm sugar syrup, so starting with a thick base ensures the ideal texture.

Fermentation Time:  Allow the batter to ferment for 6–8 hours. This fermentation process contributes to the soft and fluffy texture of the appams. In colder weather, it may take longer to ferment.

Karupatti Syrup:  Strive for a well-balanced Karupatti syrup. The addition of cardamom powder and dry ginger powder imparts aromatic and warm undertones.

Batter Adjustments:  After adding the cooled syrup to the fermented batter, adjust the consistency if needed. The batter should be thick. Adjust to your preference.

Cooking: Cook the appams on a low flame to ensure even cooking and to achieve the desired golden hue without burning.  Cover & cook the appam on one side only.  If the appams tend to stick, lightly brush the pan with oil or ghee before pouring the batter. This helps in achieving a smooth release.

Sweetness:  Adjust the sweetness of the appams according to your preference. For an extra sweet touch, consider adding another 1/4 cup of Karupatti (palm sugar).

Variation with Coconut:  For yet another variation, experiment by adding a bit of fresh shredded coconut or fresh coconut milk to the batter. This addition introduces a delightful richness to the appams.

Butter:  Serve it with a generous blob of butter. It enhances the overall flavour and adds a touch of indulgence to your Madurai Karupatti Appam.

    In the heart of Kayalpattinam, where the sea breeze whispers tales of generations, a culinary masterpiece takes centre stage - the Kayalpattinam Vellai Biriyani or Ahani Mutton Biriyani. This delectable dish not only tantalizes the taste buds but also weaves a story that transcends time.

    The Aroma of History emanates through the bustling streets of Kayalpattinam, a town steeped in tradition, cultural diversity & trade. The biriyani here is more than just a dish; it's a celebration of the region's rich history, influenced by the intermingling of cultures & trade over centuries. As the spice-laden aroma wafts through the air, it carries with it tales of the past.

    Kayalpattinam, nestled on the southeastern shores of the Bay of Bengal, has a history as rich as its biriyani. Its cultural tapestry is woven with threads of trade, tradition, and the rhythmic waves of the Bay of Bengal. The biriyani, a culinary ambassador, reflects this fusion, making it a dish to cherish.  The biriyani is more than sustenance; it's a communal experience. Families gather around, sharing stories and laughter, creating memories that linger long after the last grain of rice is savoured.

Kayalpattinam Vellai Biriyani or Ahani Mutton Biriyani Recipe

"Kayalpattinam Vellai Biryani, a symphony of coastal flavours & authentic Muslim culinary artistry."

Ingredients:

For Marinating the Mutton:

• 1 kg mutton pieces
• 1 cup curd
• 1 tablespoon ginger-garlic paste
• Green chillies, as per taste
• Salt to taste
• 4-6 cardamom pods
• 3 sticks of 1" size cinnamon
• 6–8 cloves
• 2 teaspoons fennel seeds
• 1 bay leaf
• Handful of coriander leaves, mint leaves, and pandan leaves

For Nuts Paste:

• 2 teaspoons of Almonds
• 2 teaspoons of Cashews
• 2 teaspoons of Poppy seeds  (soaked for 30 minutes)

Coconut Milk:

• 1.5 cups thick Coconut Milk
• 1.5 cups second extract Coconut Milk

For Cooking the Rice:

• 5 cups Seeraga Samba Rice (soaked for 20–30 minutes)
• Coconut Oil and Ghee for tempering
• 6 -8 Cardamom Pods
• 3 sticks of 1" size Cinnamon
• 6–8 Cloves
• 2 teaspoons Fennel Seeds
• 1 Bay Leaf
• Finely chopped Pandan Leaves
• Green Chillies, slit
• Finely chopped Onions
• 2–3 tablespoons Ginger-Garlic paste
• Handful of Coriander Leaves and Mint Leaves
• Lemon juice
• Handful of Raisins
• Salt to taste

For the Dhum Effect:

• Coconut shells turned into hot coal
• A heated Griddle
  

Method:

Marinating the Mutton:

• Combine mutton with curd, ginger-garlic paste, green chillies, salt, cardamom, cinnamon, cloves, fennel seeds, bay leaf, coriander leaves, mint leaves, and pandan leaves.
• Allow to marinate for 30 minutes.

Cooking the Mutton:

• Cook marinated mutton until tender, adding water as needed. 
• Cook until the mutton turns soft and tender.

Preparing Nuts and Poppy Seeds Paste:

• Soak almonds, cashews, and poppy seeds for 30 minutes.
• Grind into a fine paste, adding very little water.

Cooking Mutton with Coconut Milk:

• Add ground paste to cooked mutton.
• Cook on low flame for a few minutes to avoid thickening and scorching.
• When it starts to boil, add thick coconut milk and second extract coconut milk.
• Boil on very low flame, stirring occasionally. Ensure it doesn't thicken or curdle.
• Drain meat, saving coconut milk broth for later.

Cooking the Rice:

• Wash & Soak the rice in ample of water for about 20–30 Minutes.
• Heat coconut oil and ghee. Temper with cardamom, cinnamon, cloves, fennel seeds, and bay leaf.
• Add finely chopped pandan leaves. Fry until shrivelled.
• Fry slit green chillies on low flame for texture and spiciness.
• Sauté onions until water content is removed, retaining colour without browning.
• Add ginger-garlic paste, coriander leaves, and mint leaves. Sauté until aromatic.

Cooking Rice with Mutton:

• Add cooked mutton, salt, and curd. Cook on very low flame for about 5 minutes.
• Pour in saved coconut milk broth and enough water (approximately 7.5 cups for 5 cups (1 kg) of rice and meat). Mix well. Boil on very low flame, stirring occasionally to prevent curdling.
• Add soaked and well-drained rice, pour in lemon juice, and let it boil on a high flame.
• Once water reduces to half, reduce the flame to medium. Cook for a few more minutes.

Unveiling the Dhum Effect: 

Method: 

• Transfer the biriyani pot to a heated griddle.  As the biriyani pot rests over the griddle, the magic unfolds. The seeraga samba rice absorbs the flavourful essence from the mutton and spices, creating a symphony of aromas that will make your kitchen the stage for a culinary masterpiece. 
• Burn the coconut shells and allow it to burn out for a few minutes until the coconut shells turn into hot coal.

• Transfer it onto the biriyani pot lid.  This will infuse a smoky richness into our creation. This traditional technique elevates the biriyani, adding a layer of complexity that tantalizes the senses.
• Cook on the lowest flame for 15–20 minutes, allowing the griddle to heat the pot from the bottom and the hot coal from the top, mimicking the traditional dhum effect.

• After the tantalizing wait, switch off the flame, and let the biriyani pot sit undisturbed for another 10 -15 minutes. This allows the flavours to intermingle, reaching their crescendo.
• Now, with bated breath, lift the lid. The aromatic cloud that escapes is not just a fragrance; it's the embodiment of Kayalpattinam's culinary artistry.

Notes & Tips:

Cooking Mutton:

• After marinating, ensure to cook the mutton until it is tender, adding water as needed.
• When adding nuts and poppy seeds paste, cook on low flame to prevent thickening and scorching.
• Add thick coconut milk and second extract coconut milk on very low flame, stirring occasionally. Avoid thickening and curdling.

Tips for Cooking Rice for Kayalpattinam Biriyani:

• Use Seeraga Samba Rice for an authentic taste.
• Opt for coconut oil for tempering, providing an authentic flavour.
• Fry pandan leaves for a unique texture and flavour.
• When sautéing onions, retain colour without browning to preserve the biriyani's white colour.
• Cook meat and curd on a very low flame for approximately 5 minutes.
• While boiling coconut milk broth, ensure a very low flame, stirring occasionally to prevent curdling.
• The biriyani requires approximately 7.5 cups of water (including coconut milk broth) for 1 kg of rice and meat.
