Of all the Biriyanis I’ve tasted, the authentic Ambur Chicken Biriyani holds a special, simple elegance. It remains light, richly aromatic, and effortlessly traditional—a taste dedicated to my memory of the fragrant Madras streets and the smoky biriyani dekchas of yesteryear. This recipe is a tribute to that unforgettable flavour profile of the Arcot Nawabi kitchen, where every tiny grain of rice whispers stories of heritage and delicious, approachable simplicity.

Kayalpattinam Vellai Biriyani or Ahani Mutton Biriyani Recipe

"Kayalpattinam Vellai Biryani, a symphony of coastal flavours & authentic Muslim culinary artistry."

Ingredients:

For Marinating the Mutton:

• 1 kg mutton pieces
• 1 cup curd
• 1 tablespoon ginger-garlic paste
• Green chillies, as per taste
• Salt to taste
• 4-6 cardamom pods
• 3 sticks of 1" size cinnamon
• 6–8 cloves
• 2 teaspoons fennel seeds
• 1 bay leaf
• Handful of coriander leaves, mint leaves, and pandan leaves

For Nuts Paste:

• 2 teaspoons of Almonds
• 2 teaspoons of Cashews
• 2 teaspoons of Poppy seeds  (soaked for 30 minutes)

Coconut Milk:

• 1.5 cups thick Coconut Milk
• 1.5 cups second extract Coconut Milk

For Cooking the Rice:

• 5 cups Seeraga Samba Rice (soaked for 20–30 minutes)
• Coconut Oil and Ghee for tempering
• 6 -8 Cardamom Pods
• 3 sticks of 1" size Cinnamon
• 6–8 Cloves
• 2 teaspoons Fennel Seeds
• 1 Bay Leaf
• Finely chopped Pandan Leaves
• Green Chillies, slit
• Finely chopped Onions
• 2–3 tablespoons Ginger-Garlic paste
• Handful of Coriander Leaves and Mint Leaves
• Lemon juice
• Handful of Raisins
• Salt to taste

For the Dhum Effect:

• Coconut shells turned into hot coal
• A heated Griddle
  

Method:

• Combine mutton with curd, ginger-garlic paste, green chillies, salt, cardamom, cinnamon, cloves, fennel seeds, bay leaf, coriander leaves, mint leaves, and pandan leaves.
• Allow to marinate for 30 minutes.

• Cook marinated mutton until tender, adding water as needed. 
• Cook until the mutton turns soft and tender.

• Soak almonds, cashews, and poppy seeds for 30 minutes.
• Grind into a fine paste, adding very little water.

• Add ground paste to cooked mutton.
• Cook on low flame for a few minutes to avoid thickening and scorching.
• When it starts to boil, add thick coconut milk and second extract coconut milk.
• Boil on very low flame, stirring occasionally. Ensure it doesn't thicken or curdle.
• Drain meat, saving coconut milk broth for later.

Cooking the Rice:

• Wash & Soak the rice in ample of water for about 20–30 Minutes.
• Heat coconut oil and ghee. Temper with cardamom, cinnamon, cloves, fennel seeds, and bay leaf.
• Add finely chopped pandan leaves. Fry until shrivelled.
• Fry slit green chillies on low flame for texture and spiciness.
• Sauté onions until water content is removed, retaining colour without browning.
• Add ginger-garlic paste, coriander leaves, and mint leaves. Sauté until aromatic.

Cooking Rice with Mutton:

• Add cooked mutton, salt, and curd. Cook on very low flame for about 5 minutes.
• Pour in saved coconut milk broth and enough water (approximately 7.5 cups for 5 cups (1 kg) of rice and meat). Mix well. Boil on very low flame, stirring occasionally to prevent curdling.
• Add soaked and well-drained rice, pour in lemon juice, and let it boil on a high flame.
• Once water reduces to half, reduce the flame to medium. Cook for a few more minutes.

Unveiling the Dhum Effect: 

Method: 

• Transfer the biriyani pot to a heated griddle.  As the biriyani pot rests over the griddle, the magic unfolds. The seeraga samba rice absorbs the flavourful essence from the mutton and spices, creating a symphony of aromas that will make your kitchen the stage for a culinary masterpiece. 
• Burn the coconut shells and allow it to burn out for a few minutes until the coconut shells turn into hot coal.

• Transfer it onto the biriyani pot lid.  This will infuse a smoky richness into our creation. This traditional technique elevates the biriyani, adding a layer of complexity that tantalizes the senses.
• Cook on the lowest flame for 15–20 minutes, allowing the griddle to heat the pot from the bottom and the hot coal from the top, mimicking the traditional dhum effect.

• After the tantalizing wait, switch off the flame, and let the biriyani pot sit undisturbed for another 10 -15 minutes. This allows the flavours to intermingle, reaching their crescendo.
• Now, with bated breath, lift the lid. The aromatic cloud that escapes is not just a fragrance; it's the embodiment of Kayalpattinam's culinary artistry.

Notes & Tips:

Cooking Mutton:

• After marinating, ensure to cook the mutton until it is tender, adding water as needed.
• When adding nuts and poppy seeds paste, cook on low flame to prevent thickening and scorching.
• Add thick coconut milk and second extract coconut milk on very low flame, stirring occasionally. Avoid thickening and curdling.

Tips for Cooking Rice for Kayalpattinam Biriyani:

• Use Seeraga Samba Rice for an authentic taste.
• Opt for coconut oil for tempering, providing an authentic flavour.
• Fry pandan leaves for a unique texture and flavour.
• When sautéing onions, retain colour without browning to preserve the biriyani's white colour.
• Cook meat and curd on a very low flame for approximately 5 minutes.
• While boiling coconut milk broth, ensure a very low flame, stirring occasionally to prevent curdling.
• The biriyani requires approximately 7.5 cups of water (including coconut milk broth) for 1 kg of rice and meat.

Spices:

RAMADAN NOMBU KANJI

PREPARATION:

• Wash the Jeeraga Samba/Basmati rice & Moong Dhal until the water runs clear.
• Soak the rice & dhal for about 20 minutes.
• Boil the water and keep it aside.
• Wash and drain the Minced Meat & keep it aside.
  

METHOD:

• Heat Ghee in a pressure cooker, fry the ingredients mentioned under 'Spices' on a very low flame until aromatic.
• Add finely chopped Onions and Green Chillies, slit into two, to the above and sauté until onions turn translucent.
• Add the Ginger Garlic Paste and sauté until the raw flavour goes, and it turns fragrant.
• Then add finely chopped Tomatoes and sauté until tomatoes turn soft & oil separates from the mix.
  
• Now add in the minced meat and give a quick stir.
• Drain the soaked Rice & Dhal and add it to the above.
• Fry this for about 2–3 minutes on a very low flame.
• Add shredded coconut and give a quick stir.
  
• Pour in the Coconut Milk, boiled Water, Salt and mix well.
• Allow it to boil.
• Add finely chopped Mint & Coriander Leaves.
• Cover the pressure and place the vent cap.
• Cook on a high flame for a whistle, then reduce the flame and cook for another 3–4 whistles.
• Switch off the flame and allow the pressure to release. 
• Once the pressure is released, open the lid and mix Nombu Kanji with a ladle until well combined.
• Can add a handful of Coriander Leaves and Mint as garnish.
• Can garnish Nombu Kanji with Dried Onions/Birista.
  
• Serve Nombu Kanji hot with your choice of side dish.
• Paruppu Vadai, Masal Vadai, Uzhundhu Vadai, Kari Vadai, Meat Balls, Cutlets goes hand in hand with warm Nombu Kanji.

RAMADAN NOMBU KANJI

NOTES:

• I have used Jeeraka Samba Rice in this recipe.  Can use Basmati Rice / Chinigura Rice/Raw Rice for this dish.
• Some recipes call for using Rice grits alias Kurunai Arisi, which makes the cooking process quick, and also these rice grits are suitable for making Porridges (Kanji).
• If you do not have Rice grits, simply give a quick pulse in a dry jar before cooking.
  
• Can substitute half the amount of Ghee with Oil.
• Adding Cardamom and Bay Leaves are purely optional.
• Adjust the number of Green Chillies to suit your spice preference.
• I have added Minced Meat (Beef) in this recipe.  Can add your choice of meat as minced or small pieces.
  
• Adjust the consistency of Nombu Kanji to suit your preference.

HOW TO COOK SOYA CHUNKS BIRIYANI/MEAL MAKER BIRIYANI

SOYA CHUNKS BIRIYANI - MEAL MAKER BIRIYANI

INGREDIENTS:

To Soak the Soya Chunks: 

For Soya Chunk/Meal Maker Biriyani:

For Biriyani Masala Paste:

METHOD:

To Soak & Marinate the Soya Chunks: 

• Take a Cup of Soya Chunks/Meal Maker, wash it for about 2-3 times.
• Then pour in boiling hot water to the Soya Chunks.
• Soak it for about 20-30 minutes.
• It would have absorbed the water and would have doubled in size.
• Once soaked, squeeze out the Soya Chunks.
• Squeeze well to remove any excess water from the Soya Chunks.
• Now add all the ingredients mentioned under "To marinate" to the soaked and squeezed out Soya Chunks.
• Mix well until the soya chunks are well coated with the marinade.
• Leave it aside for about 20-30 minutes.

For Soya Chunk/Meal Maker Biriyani:

• Rinse the Rice once or twice, moving your fingers through the rice, wash it until the water runs clear.
• Soak the washed rice for about 20 - 30 minutes.
• Grind the ingredients mentioned under ' For Biriyani Masala' into a fine paste & keep it aside.
• Heat Ghee & Oil in a heavy bottomed pan or in a Pressure cooker.
• Sauté finely chopped Onions and saute until it turns translucent.
• Add Garlic Cloves and Green Chillies slit into two and fry for a while.
• Add the ground Biriyani Masala Paste to the above and sauté until fragrant.
• Now add Turmeric Powder, Red Chilli Powder and fry it on a low flame for a few minutes. 
• Add finely chopped Tomatoes and cook until it turns soft & oil separates from the masala.
• Now add the marinated Soya Chunks and give a quick stir.
  
• Pour 1 Cup of Curd/Yogurt to the Masala and mix well, leave this on a low flame until the Mix turns a bit dry.
• Drain the soaked Rice and add it to the above Masala and mix well, fry this on a low flame for about 3-5 minutes.
• Sprinkle a handful of Mints and Coriander Leaves.
• Pour in the Thick Coconut Milk and cook this on a low flame for a few minutes.
• Pour Lemon Juice along with Salt and Mix well.
• In a separate pan, boil the 11/2 Cups of Water and pour it into the Soya Chunks Biriyani Mix. 
• I have used 1:11/2 Cups of Rice: Water Ratio. So for 2 Cups of Rice 21/2 Cups of Water + 1/2 Cup of Curd.( I have substituted 1 Cup of Water with Thick Coconut Milk)
• Cover the lid of the pressure cooker and cook for one full whistle.
• Meanwhile, heat a Chapati Griddle on a high flame for a few minutes, or until the griddle is very hot.
• While lowering the flame to cook biriyani, keep this preheated Chapati griddle below the pressure cooker to give a dhum effect.
• Cook for another 15 - 20 minutes.
• After 20 minutes, switch off the flame and leave the pressure cooker on the stovetop untouched, until the pressure is totally released.
• Once cooked, add the remaining Ghee to the Soya Chunks/Meal Maker Biryani and fluff-up the rice gently.
• Serve Soya Chunks/Meal Maker Biryani along with a boiled Egg, Curd-Onion Raitha for a simple yet complete Meal.
• Or serve it along with Kathirikai Pachadi or any preferred vegetarian or non-vegetarian side dishes.

SOYA CHUNKS BIRIYANI - MEAL MAKER BIRIYANI

NOTES:

• Well-seasoned Basmati / Jeerakasamba Rice plays a vital role in the texture of Biryani. 
• Soaking the rice helps in getting perfectly cooked rice.
• Use the water ratio to suit the type of rice you are using.
• Usually, 1:11/2 Cups of Rice Water Ratio is perfect for Basmati and Jeeraka Samba Rice.
• If you like your Rice to be cooked 'Al dente' follow the instructions in the package.
• For a softer version, add some extra water(1/2 Cup preferably).
• Soak the Soya Chunks in boiling hot water and once soaked make sure to squeeze it out well before marinating it.
• Marinating the Soya Chunks helps to add flavour and essence into it.  Otherwise, Soya Chunks may taste bland in the Biriyani.
  
• Substitute 1 Cup of water for Curd.
• Adjust the amount of Green Chillies to suit your spice level.
• Adjust the amount of spices to your preference.
• Use ample of Ghee while cooking Biriyanis, this plays a major role in the texture and gives an awesome aroma to the dish.
• Adding lemon juice is to avoid rice from getting sticky.
• The same recipe can be prepared with Mutton/Beef/Chicken or convert it into Vegetable Biriyani by adding your preferred Classic Vegetables in the Biriyani. 
• Adjust the cooking time suitable for the meat used.
• Can keep a hot Griddle/Tawa beneath the vessel while cooking the Biryanis in Dhum.
• This is to avoid rice from getting scorched at the bottom of the vessel.

Zafrani Firni -Authentic Mughlai Phirni with Saffron and Almonds

Method: How to Make Zafrani Phirni (Kesar Badam Firni)

Preparing the Ingredients

• Roast & Soak Saffron – Dry roast saffron strands for a few seconds, then soak in 1 tablespoon warm milk and set aside.
• Blanch Almonds – Soak almonds overnight or blanch them in hot water, then peel and reserve a few for garnishing.
• Grind Almond Paste – Grind the remaining almonds into a coarse paste and keep aside.
• Prepare Nuts – Chop or sliver reserved almonds, cashews, and pistachios for garnishing.
• Soak & Dry Rice – Wash and soak rice for 2 hours, then drain and spread on a kitchen towel for 30 minutes to dry.
• Powder the Rice – Pulse the dried rice in a mixer to make a coarse powder (not too fine!).
• Mix with Cold Milk – Combine rice powder and almond paste with cold milk, stirring well to avoid lumps.

Cooking the Phirni

• Boil Milk – In a heavy-bottomed pan, bring the remaining milk to a boil.
• Add Rice-Almond Mixture – Gradually pour the rice-almond mix into the boiling milk, stirring continuously.
• Cook Slowly – Simmer on low flame for 10–15 minutes, stirring to prevent lumps.
• Add Sugar & Flavouring – Once the rice is fully cooked, stir in sugar and cardamom powder.
• Infuse Saffron – Pour in the saffron-soaked milk and mix well.
• Drizzle Kewra Essence – Add a few drops of kewra essence (optional) for an aromatic touch.
• Adjust Consistency – Cook until desired thickness is achieved.
• Chill & Serve – Let Phirni cool to room temperature, then refrigerate for a few hours.
• Garnish & Enjoy – Serve chilled, garnished with nuts, rose petals, and saffron strands.
