Unakka Manthal Varuthathu – Dried Sole Fish Fry

    Few dishes bring as much nostalgia to my plate as Unakka Manthal Varuthathu—a crispy, flavour-packed Dried Sole Fish Fry. More than just a dish, this is a journey down memory lane. Every trip to Palakkad is incomplete without bringing back a pack of Unakka Nangu or Unakka Manthal, making it an inseparable part of my travel memories.

A Nostalgic Bite

    My love for dried fish goes back further than I can remember. It has been one of my absolute favourites since childhood. Holidays at my mother’s home meant a visit to the Kongad Chanda—a bustling shandy market in Kongad, open only on Mondays. My grandfather would carry a big vatti (basket) to the market and return with loads of groceries, fresh vegetables, and, without fail, two special items—A pack of dried fish wrapped in newspaper, securely tied with jute rope.  A few Ari Murukku, tied like a garland, ready to be devoured.

    The moment he returned, we kids were treated to crunchy Murukkus, while my grandmother got busy frying Unakka Nangu. A crispy piece of Unakka Manthal with steaming rice? Heaven!

AVAL KALKANDU PONGAL

AVAL KALKANDU PONGAL

INGREDIENTS:

For Aval Kalkandu Pongal:

Ghee - 2 Tablespoons
Aval/Flattened Rice - 1 Cup
Powdered Kalkandu/Rock Candy - 1/2 Cup
Cardamom Powder - 1 Teaspoon
Milk - 3/4 Cup
Water - 1/2 Cup 
Saffron - a few strands
Salt - a Pinch 
Edible Camphor - a Pinch

For Garnishing:

Ghee - 1 Tablespoon
Cashew Nuts - 8-10 Nos.
Raisins - a few

AVAL KALKANDU PONGAL

METHOD:

For Aval Kalkandu Pongal - Beaten Rice & Rock Candy/Sugar Pongal:

• Wash Aval/Beaten Rice for about 2-3 times or until water runs clear.
• Then soak Aval/Beaten Rice for about 10-15 minutes.
• Once soaked drain it and squeeze out any extra water from the Aval/Beaten Rice.
• Can leave it in a kitchen towel to slightly dry for about 10-15 minutes.
  
• Meanwhile, powder the Cardamom along with Rock Candy/Sugar into a fine powder and keep it aside.
• Soak the Saffron strands in 2 tablespoons of milk and keep it aside.
  
• Heat 1 tablespoon of Ghee and roast the Cashew nuts & raisins.
• Remove the Cashews & Raisins from the Ghee & keep them aside.
• Now, add another 2 tablespoons of Ghee and roast the Aval/Beaten Rice on a very low flame for about 3-5 minutes.
• Meanwhile, heat the milk & water.
• Pour in the boiled milk & water to the Aval/Beaten Rice and cook this on a very low flame for about 5-8 minutes or until it is cooked.
• Now add in the powdered Rock Candy/ Sugar & Cardamoms and mix well until well combined.
• Pour in the  Saffron soaked milk and give a quick stir.
  
• Cook this on a low flame until it reaches the desired consistency.
• Finally, garnish Aval Kalkandu Pongal with ghee roasted Cashew Nuts & Raisins.
• Serve Aval Kalkandu Pongal hot.

AVAL KALKANDU PONGAL

NOTES:

• Use the thick variety of Aval/Beaten Rice for this recipe.
• I have used the White Aval.  You can use the red variety too.

RED AVAL/BEATEN RICE/FLATTENED RICE

• Rock Candy/Sugar takes some time to melt, so adding it directly to the cooked Aval can make the pongal mushy.
• Alternatively, can melt the Rock Candy/Sugar in 1/2 a Cup of water and then add it into the Pongal.
  
• Can substitute Rock Sugar with normal White Sugar, Jaggery or Palm Sugar.
• Adjust the sweetness to suit your preference.
• You can add a few teaspoons of grated coconut if you prefer. Alternatively, can roast small bits of sliced coconuts in Ghee and add it along with Cashew Nuts & Raisins.
  
• Can substitute Milk with Coconut Milk too.
  

CHICKEN SALNA

       Parotta and Salna is an ultimate match made in heaven!!! Though it can sound too enthusiastic, at the least it is a Match made in Madurai, as for people of Tamil Nadu.  But Parotta and Salna knotted their combination in Ceylon alias Sri Lanka. The traces of Sri Lankan Origin is clearly visible when it comes to Madurai Parotta.  But the culinary specialists of Madurai have gone to the next level of innovating Parotta varieties like Poricha Parotta, Coin Parotta, Madakku Parotta, Veechu Parotta and Bun Parotta etc., & etc.,  

    This Parotta all the way travelled to Malaysia(not sure whether it is from Sri Lankan or Tamilnadu influence) and it is called in the name of Roti Canai.   Least to mention the local Mamak shops serve it along with Salna.  And the renditions of Roti/Parotta you could see in Malaysia will surely override the numbers available in Madurai.  While talking about one particular Roti - Roti Banjir or the flooded Roti, where shreds of Parotta is served with copious serving of Salna.  Literally, Salna would be flooded over the Parotta.

    Parotta without Salna is totally an incomplete meal or a feel.  I was in a quest for a perfect Salna which needed to suit our taste buds.  And after a long search and quite a number of trial & errors(not literally errors, it didn't appease our senses as a True Salna), I finally found one which perfectly tasted as we wanted, and it is this recipe.

    The beauty of this recipe is that it tastes great even without any meat or vegetable in it, as a Plain Salna or Empty Salna.  Or if you are in a literal mood for a treat go ahead add Chicken or Mutton or for a vegetarian version add Mushrooms. If Keralites are addicted to Parotta and Beef, then Tamilians are an ardent fan of this inseparable pair - Parotta & Salna.  In my opinion, this Salna is one gravy taken for granted or considered "not so special", but at the same time cannot forgo it too.  Maybe the reason behind it, is that it comes along with Parotta, and we still do order a variety of Side Dishes to wash off the Parottas.  Leaving aside this unsophisticated Salna.  Salna is a Gravy or a Curry of slight thin consistency, brightly hued and spicy too.  The cornucopia of flavours from the spices in Salna makes this humble Salna a delicacy on its own.

    I have heard a few anecdotes saying that there are Coimbatoreans who love to gulp down a few cups of Shree Annapoorna Gowrishankar Sambar(My husband's maternal Grandfather was one person), for the love of it.  Then there is nothing exaggerated if die-hard fans of Madurai gobble up jugs of Salna.  So is the love for certain food items.  பாசக்கார புள்ளைங்க!!!

HOW TO  COOK CHICKEN SALNA

CHICKEN SALNA

 INGREDIENTS:

To Sauté:

Add-ons to Grind: 

For Chicken Salna:

METHOD:

To Sauté & Grind:

• Heat Oil in a pan, reduce the flame to low and add the spices mentioned under "To Sauté" as mentioned in the order.
• Followed by Shallots & Poppy Seeds.  Sauté until shallots turn translucent.
• Then add grated coconut and fry on a low flame until coconuts turn slightly dry.  
• The colour shouldn't change.
• Now switch off the flame and allow the ingredients to cool down.
• Once cooled, add the ingredients mentioned under "Add-ons to Grind"  along with the sautéed ingredients.  
• Can substitute Roasted Gram Dhal with Cashew Nuts (Use about 8-10 Cashews).
• Grind it into a fine paste and keep it aside.

For Chicken Salna:

• Clean, wash & cut Chicken into medium-sized pieces.
• Allow it to drain in a colander.
• Dry Roast the Cumin Seeds and grind it into a fine powder and keep it aside.
• Heat Oil in a pan, splutter Cinnamon, Fennel Seeds & Curry Leaves.
• Immediately add Chicken Pieces and sear it until it turns into white and the water is totally absorbed.
• Then add finely chopped Onions and sauté it on a low flame until translucent.
• Next, add finely chopped Tomatoes and sauté it until it turns soft and cooked. 
• Now sprinkle a dash of salt and give a quick stir.
• Add finely chopped Mint and Coriander Leaves.
• Add Turmeric Powder, Red Chilli Powder, Coriander Powder, Cumin Powder, Garam Masala Powder, Mutton Masala Powder.
• Fry this on a low flame until the raw flavour goes.
• Sprinkle some water and cook this on a low flame until oil separates from the mix.
• Cover and cook until the Chicken pieces turn soft and tender.
• Adjust the amount of water as required.
• Now pour in the ground Salna Masla Paste and mix well.
• Pour in some water and adjust the consistency.
• Boil the Salna on a very low flame until the raw flavour goes, and it reaches the desired consistency.
• Switch off the flame and garnish it with finely chopped Coriander Leaves.
• Serve this Chicken Salna with Parotta, Chapati, Dosa, Idli,  Idiyappam etc.,
• It is one best combination with Parotta and Kari Dosai.

CHICKEN SALNA

NOTES:

• Skip adding Chicken Pieces and follow the same recipe for Empty Salna or Plain Salna.
• For Mutton Salna slightly increase the amount of spices.
• For a vegetarian version, prepare the same recipe with Mushrooms.
• Can substitute Roasted Gram dhal with Cashew nuts.
• Mint Leaves & Coriander Leaves gives a wonder flavour and aroma to Salna.  So add as you desire.

SUKHIYAN/SUGIYAN

       Sukhiyan/Sugiyan is a common deep-fried Kerala Palaharam(snack) prepared with Green Gram & Coconut Filling coated in a batter. Traditionally, cooked green grams are mixed along with Jaggery and Coconut and then they are made into small balls. Later the green gram balls are dipped into a pre-mixed batter and deep fried in Coconut Oil for a more authentic and traditional Kerala style - Sukhiyan/Sugiyan.  In Tamilnadu we can find the same recipe in the name of Sukhiyam/Suzhiyam.

     I have grown up with fond memories of snacking during Tea Time.  Sukhiyan/Sugiyan is a popular Tea time snack & a common Kerala style Nadan Palaharam. A colloquially famous term "Kadi & Kudi" - which literally means a Bite along with a Sip. A snack to glorify the tea time.  It is very common in an Indian household to prepare a tea time snack(Naalumani(4 O' Clock) Palaharam), every evening to go along with Tea or Coffee.  When sweet treat lingers in, then comes along the famous Sukhiyan/Sugiyan - our Gods Own Country's Green Gram Fritters.

    My husband has fond anecdotes about this Sukhiyan.  During holidays, he would pair up with his Mom and buy these Sukhiyan from a Street food vendor near Pandian School in Tatabad, Gandhipuram.  He would say, as a matter of fact, when it is Sukhiyan, his Mom would never say NO.  Both love snacks and desserts with Green Gram & Jaggery.     

    So here comes, yet another tasty snack, a wonderful Kerala Naalumani Palaharam,  Sukhiyan to add ZING to the crowned Tea Time.

HOW TO MAKE SUKHIYAN/SUGIYAN /GREEN GRAM FRITTERS

SUKHIYAN/SUGIYAN

INGREDIENTS:

For Sukhiyan Filling:

Green Gram - 1 Cup
Jaggery - 1/2 - 3/4 Cup
Grated Coconut - 3/4 Cup
Cardamom Powder - 1/2 Teaspoon
Dry Ginger Powder - 1 Pinch(Optional)

Oil - To Deep Fry

METHOD:

For Sukhiyan Filling:

SUKHIYAN/SUGIYAN

• Clean, Wash & Soak Green Moong Bean for about 1 hour.
• Once soaked, drain and discard the water.
• Pour in 11/2 Cups of Water to the Green Gram and pressure-cook on high flame for 3 Whistles.
• Reduce the flame to low and cook for another 3-4 Whistles.
• Switch off the flame and allow the pressure to release.
• Once cooked, slightly mash the Green Gram.
• Meanwhile, Melt the Jaggery with 1/2 Cup of Water.
• Strain it out to remove any impurities.
• Pour melted Jaggery to the cooked Green Gram.
  
• Now add grated Coconut and mix well.
• Add Cardamom and Dry Ginger Powder to the above.
• Cook this on a very low flame until the Jaggery mix becomes dry.
• Switch off the flame and allow it to cool.
• Once cooled, make small balls out of the above mixture and keep it aside.
  

For the Batter:

• Mix all the ingredients mentioned under 'For the Batter'.
• Use cold water to make the Batter.
• Mix the ingredients without any lumps.
• The consistency of the batter should be slightly thicker so that it coats the Green Gram filling.
  

 

To Deep Fry Sukhiyan/Sugiyan:

SUKHIYAN/SUGIYAN

• Heat Oil in a deep pan and allow it to smoke off.
• Reduce the flame to medium-high and wait for a few minutes.
• Now, gently dip the Green Gram-Coconut Balls into the batter.
  
• Carefully drop it into the hot oil.
• Deep-fry the batter dipped Green Gram-Coconut Balls on a medium-high flame until they turn Crispy and Golden Colour.
• Once done, remove the fried Sukhiyan/Sugiyan from oil and drain it on paper towels.
• Serve Sukhiyan/Sugiyan Fritters hot with a hot cup of Chai or Coffee.

SUKHIYAN/SUGIYAN

NOTES:

• Commonly, All-purpose flour is used while preparing the batter for Sukhiyan/Sugiyan.
• Can be substituted with Wheat Flour(Aatta) too.
• Rice Flour gives a crispy texture to Sukhiyan/Sugiyan.
• Adding Baking Soda is optional, but it helps to retain the crispiness even after a long time.
• Some recipes call for adding a Pinch of Turmeric Powder while mixing the batter.
• I do not prefer adding Turmeric Powder into the batter.

KARUVEPPILAI THUVAIYAL/THOGAYAL

    The reason for a Curry Leaf Tree in our old home in Malaysia was my MIL. During one of her visits, she suggested we plant a Curry Leaf Tree & it is almost eight years, standing tall & loyal with avatar sized leaves. That's what one of our acquaintances said when she took some Curry Leaves from the plant. It has grown tall and has spread out wide branches. I have never since bought Curry Leaves from the market.  But when I shifted my house, I was literally worried about leaving my Curry Leaf tree.  Still I go to my old home and a pluck handful of Curry Leaves and store them up.  It lasts for up to a month to 45 days and again when I pass by I make sure to get another batch.

HOW TO COOK KARUVEPPILAI THUVAIYAL/THOGAYAL - CURRY LEAVES  CHUTNEY

KARUVEPPILAI THUVAIYAL/THOGAYAL

INGREDIENTS:

For Karuveppilai Thuvaiyal/Thogayal:

 METHOD:

• Insert the Tamarind into a skewer and char it on a direct flame until the colour changes, for about 10-15 seconds. Keep this aside.
• Heat Oil, roast the Dry Red Chillies until they fluff up.
• Add Garlic Cloves and Salt to the above ingredients, fry until garlic is well sautéed.
• Sauté on a very low flame until they turn dry.
• Add  grated Coconut and fry until coconuts are dry and turn into a slight golden colour. (Care should be taken not to burn the ingredients).
• Immediately add Curry Leaves and fry it on a low flame briefly, until it slightly wilts.
  
• Add Asafoetida Powder & a small piece of Jaggery to the above and give a quick stir.
• Switch off the flame and allow this mixture to cool.
• Grind  Karuveppilai/Curry Leaves Thuvaiyal into a smooth paste in Mortar and Pestle or in a dry blender jar.
• Add very little water(preferably no need to use water) while grinding Karuveppilai/Curry Leaves Thuvaiyal.
• Karuveppilai/Curry Leaves Thuvaiyal is a perfect match for Steamed Rice, serve it with a drizzle of melted ghee or Coconut Oil/Gingelly Oil over it.
• Goes well with Dosa, Idli and Uthappam too.
• It is one best combination to be served along with Ragi Kali(Ragi Mudde) or Ragi Koozh/Finger Millet Porridge, Pazhaya Sadham, Kanji(Rice Porridge) etc.,
  

KARUVEPPILAI THUVAIYAL/THOGAYAL

NOTES:

• Adding Coconut is purely optional in this Thuvaiyal recipe.  Can prepare the same without adding coconuts too. 
• Can also do use coconut slices in the recipe.  If using coconut slices, roast them first, as they will take a longer time to fry. Then add the rest of the ingredients one by one.
• Alternatively you can use 2 tablespoons of Bengal Gram Dhal.
  
• Adjust the amount of Red Chillies and Tamarind to your preference. 
• Charring the Tamarind over direct flame gives a slightly smoky flavour and brings out the sweetness from the tamarind.
• If using tamarind with seeds, remove the seeds and threads if any and shred it into small pieces and then insert it into the skewer. Do not soak Tamarind in water for this recipe.
• Roast all the ingredients on a very low flame until they turn into golden brown and aromatic.
• But make sure to fry Curry Leaves on a very low flame briefly, until it slightly wilts.
• Care should be taken not to burn the ingredients, which would spoil the taste of the Karupveppilai Thuvaiyal.
• This is a dry Thogayal/Thuvaiyal, grinding it with mortar and pestle (Ammikkal) yields best results.
• Can use a small blender/coffee grinder or mixer-grinder to grind this, if needed can add few drops of water to the mixture.
• Adding Garlic Cloves & Asafoetida to this Thuvaiyal is truly optional.
• Can convert it into a Chutney by grinding it along with a bit of water.
• Adjust the consistency of this Thuvaiyal to suit your preference.

KALYANA PAYASAM - KADALA PARUPPU & PASI PARUPPU PAYASAM

Today is Thiruvonam, yet another Onam Season - Onakkaalam!!!

    Yet another Onam with yet another Classic Payasam - Kalyana Payasam.

    'Payasam Culture' has a special place in Indian Cuisine. Payasam/Pradhaman has been an essential dish throughout the history of the Indian culinary heritage.  No Banquet/Feast would be considered complete without this delectable classics. It is commonly served during Festivals, Ceremonies, Feasts and Celebrations. This Payasam is uniquely served in a Wedding Banquet and is predominant in Tamil Brahmin Weddings.  The concept of this Payasam is blending two types of Dhals, which commemorates the earthly ceremony of match made in heaven of two individuals in a Marriage. So this type of Payasam is served in Tamil Brahmin Weddings.  The uniqueness of this Payasam is the blending of two types of Dhals -  Pasi Paruppu(Moong Dhal) & Kadala Paruppu(Bengal Gram Dhal) which needs individual cooking time. 

    Recently while watching a movie, an anthology there came a short film based on popular Tamil writer, Thi.Janakiraman's short story - 'PAYASAM'.  A story which goes along with the depiction of a person's hatred towards his nephew.  The backdrop goes along in a typical Tamil Brahmin wedding scenario    and there they show few scenes on Wedding cooking.  The cook explains about this Kalyana Payasam or Paruppu Payasam and the speciality why this Payasam is served in Weddings.  But the irony of the story is that the whole Vat of this wonderful Payasam is poured out by the person who hates his nephew.  An imbecile act of an individual to bring  a bit of worry to his opponent.  

KALYANA PAYASAM - KADALA PARUPPU & PASI PARUPPU PAYASAM

KALYANA PAYASAM - KADALA PARUPPU & PASI PARUPPU PAYASAM

 

INGREDIENTS:

For Kalyana Payasam - Kadala Paruppu & Pasi Paruppu Payasam

For Garnishing:

Ghee - 2 Tbspn
Coconut Pieces - 3 Tspn
Cashew Nuts - 10 - 12 Nos.
Raisins - 10 - 12 Nos.

METHOD:

For Kalyana Payasam - Kadala Paruppu & Pasi Paruppu Payasam:

• Add Jaggery into the 3/4 Cup of Water, boil this on high flame for few minutes.
• Lower the flame and boil for 5-6 minutes and strain for any impurities.
• Dry Roast the Moong Dhal in a low flame until aromatic for a few minutes.
• Cook Moong Dhal in 11/4 Cups of water until it turns soft.
• Allow it to cool and mash it up slightly.
• Soak Bengal Gram Dhal for about 1 hour.
• Once soaked, drain and discard the water used for soaking.
  
• Cook Bengal Gram Dhal in 1-11/2 Cups of Water until it turns soft and cooked.
• Once cooked, mash Bengal Gram dhal well.
• Alternatively, can pulse it up in a mixer-grinder briefly.
• Now, heat Ghee in a wide heavy bottomed pan or bronze Uruli.
• Add in the mashed Bengal Gram Dhal and sauté it on a low flame until the raw flavour goes.
• Then add the cooked Moong Dhal and sauté it on a low flame for a few minutes.
  
• Pour in the Jaggery Syrup to the above and allow it to boil on a very low flame.
• Allow it to absorb the Syrup.
• Powder the Cardamoms with few teaspoons of Sugar into a fine powder. 
• Add Cardamom Powder and Dry-Ginger Powder to the above and mix well.
• Pour thin Coconut Milk into it and cook on a low flame for a few minutes.
• Finally, add Thick Coconut Milk and leave it on a low flame for a few more minutes, stirring it continuously or until it reaches the desired consistency.
  
• Heat Ghee in a separate pan, fry Coconut Slices until they are aromatic and slightly browned.
• Fry Cashew nuts and  Raisins.
• Add the fried Coconut slices, cashews and nuts to the Kalyana Payasam and mix well.
• Serve Kalyana Payasam hot or cold.  

KALYANA PAYASAM - KADALA PARUPPU & PASI PARUPPU PAYASAM

 

NOTES:

• Dry Roasting the Moong Dhal gives a wonderful flavour to the Payasam.
• Moong Dhal can be cooked in a pressure cooker.  Cook on a high flame for a Whistle and then lower the flame and cook for another 2 whistles or for five minutes. 
• Mashing the cooked Moong Dhal is optional, Can leave the dhal as such too.
• I mash half of the Dhal and leave the rest as such.
  
• Soaking the Bengal Gram Dhal speed up the cooking process.
• Bengal Gram Dhal can be cooked in a pressure cooker.  Cook on a high flame for 2-3 Whistle and then lower the flame and cook for another 4-5 whistles or for about 8 minutes. 
• Once cooked mash the Dhal well.  Alternatively, can pulse it in a Mixer briefly.
  
• Frying the mashed dhal in Ghee gives a wonderful aroma and removes the raw flavour from the Bengal Gram Dhal.
  
• Melt the Jaggery and strain for any impurities.
• Adjust the amount of sweetness to your preference.
• Adding Coconut Pieces and Dry-ginger powder is totally optional.

BEETROOT KOLA URUNDAI FRY

    Once, while I was shopping for vegetables in a Super Market, & I was picking up Beetroots. A Chinese lady came up to me & asked what you would do with this Vegetable? She was intrigued by the vegetable & particularly with the colour. That was what I understood from the little of my knowledge with the local language. Me, with my language skills(which is very poor to the standards) & with my action skills(which is comparatively commendable) explained to her that, Beetroots are healthy, rich in iron & vitamins. (Ah!!! I should have said like... Nalluvaru, Vallavaru, Naalum therinjavaru..., words were brimming up... but I was totally tongue-tied). Can cook a wide range of recipes out of it, though sticking a bit into their style of cooking - salads, juice, stir-fries etc., But the success of the conversation(did it at all happen?!!!) was that she picked some Beetroots saying that she will make Beetroot Juice. And finally, I gave her a thumbs up & we both exchanged a big smile(which doesn't need any language skill or translation). 

    Well, coming to the point, Beetroots fall into a category where it is liked & disliked equally. But according to me, it is a superfood and a staple in my refrigerator. I make a wide range of recipes out of it, and I love the wonderful colour it imparts into the dishes it is added.  

    While I was writing my previous post, I was a bit troubled by the fact that the Lunch Menu is not suitable for Vegetarians. Then I thought that I have a Vegetarian version of the same Kola Urundai with Beetroots & Vazhaipoo(Banana Blossom). This Beetroot Kola Urundai had been a long pending post, and there came a chance to write it up right away. A healthy and flavourful snack/starter/side dish from Chettinad Cuisine. 

    Though Mutton Kola Urundai is the most proclaimed Chettinad delicacy, a recipe prepared with Minced Meat. Chettinad Cuisine has catered the same delicacy in Vegetarian versions too - the ones with Vazhaipoo, Beetroots, Carrots, Soya Chunks, Vegetables, Plantains, Radish etc., & etc. Beetroot Kola Urundai Fry recipe is similar to Vazhaipoo Kola Urundai & Mutton Kola Urundai, with the only difference that the base ingredient is substituted with Beetroots here. When it is prepared with Beetroots, it is healthy & tasty. You can serve this Beetroot Kola Urundai Fry as a snack or a starter or simply serve it as a side dish along with Rice & a Curry. If you want to make Curry/Kuzhambu with this Beetroot Kola Urundai, then you don't need to fry them.

HOW TO COOK BEETROOT KOLA URUNDAI FRY

INGREDIENTS:

For Beetroot Kola Urundai: 

Beetroots - 2 Cups

Shallots - 15 Nos.

Garlic cloves - 8-10 Nos.

Ginger - 1" Piece

Curry leaves - 2 sprigs

Coconut grated - 1/2 cup

Pottukadalai(Roasted Bengal Gram Dhal) - 1/2 Cup

Egg - 1 No. (Optional).

Oil - 2 Tbspn ( to saute)

Salt - To Taste

Spices:

Dry Red Chillies - 12 Nos

Fennel Seeds - 2 Tspn

Cloves - 5 Nos.

Cinnamon 1" piece - 2 Nos.

To Deep Fry:

Oil

METHOD:

Beetroot Kola Urundai Fry:

• Dry roast all the ingredients under spices on a low flame for few minutes, and grind it into a fine powder and keep it aside.
• Grind the Roasted Bengal Gram Dhal(Pottukadalai) into a fine powder and keep it aside.
• Heat oil in a pan and saute, Shallots, Curry leaves, finely minced Garlic and Ginger until Shallots turn translucent.
• Add Turmeric Powder and freshly ground Spices to the above and give a quick stir.
• Add grated Coconut and fry for few more minutes.
• Add finely chopped/grated Beetroots and salt to the above and fry until there is no water content in the mix and it is totally dry.
• Saute it for few minutes until the Beetroots are cooked.
• Add powdered Roasted Bengal Gram Dhal(Pottukadalai) to the above and mix well.
• Remove from fire and allow it to cool.
• Grind the mix, slowly by pulsing it first and then increasing the speed of the mixer. 
• Add an egg to the above and mix well.
• Make small balls out of the mix and keep it aside.
• Heat oil in a frying pan, when it is hot enough to fry, carefully drop the Beetroot Kola Urundai one by one into it.
• Just add enough Beetroot Kola Urundai into the oil, do not overcrowd the pan.
• Do not disturb or try to turn the Beetroot Kola Urundai for few minutes.
• Keep the flame at medium and fry the Beetroot Kola Urundai.
• When the Kola Urundai is half done, turn them around slowly and fry them until they are golden brown.
• Remove from oil and drain them on a paper towel.
• Serve Beetroot Kola Urundai hot.

Beetroot Kola Urundai Kuzhambu(Curry):

• Can add these Beetroot Kola Urudai into the Curry too.  While doing so you dont need to fry them.

• Substitute Mutton Kola Urundai with Beetroot Kola Urundai. 

NOTES: 

• Can grate or finely chop the Beetroots.
• Dry roasting and powdering the spices will give a nice flavour.
• Do not substitute Pottukadalai/ roasted Bengal gram dhal with Besan or any other powder.  
• Pottukadalai powder helps to remove the wetness in the mix & also helps to yield soft Beetroot Kola Urundai.
• Do not add water to cook the Beetroots. 
• The mix should be dry with no water content.
• 
  
• Do not add water while grinding too.
• The water content will break the Beetroot Kola Urundai in oil while frying them and would become oily.
• Adding eggs will make them crispy. But for a vegetarian version, you can avoid adding eggs.
• But then oil tends to bubble up while frying the next batches.
• To avoid this, add a piece of tamarind into the hot oil.
• I add a handful of breadcrumbs while grinding the Pottukadalai powder, this makes it crispier and adds a bit of sweetness to the Beetroot Kola Urundai. It is optional.
