    Mango Sago Dessert is a popular and refreshing Asian dessert, particularly enjoyed in Hong Kong, Taiwan, and other Southeast Asian countries. Mango Sago Dessert is believed to have originated in Hong Kong during the 1980s.  This Hong Kong Dessert gained popularity quickly in the region and later spread to other Asian countries due to its delightful combination of fresh mangoes, tapioca pearls (sago), and creamy coconut milk. The dessert became a favourite among locals and tourists alike for its tropical flavours and soothing texture.

    Mango Sago Dessert is a sweet and creamy chilled dessert that offers a burst of flavours in every spoonful. The base consists of ripe mangoes, which are blended to form a smooth puree. Tapioca pearls (sago) are then added to give the dessert a delightful chewy texture. The dish is completed with a luscious coconut milk mixture, which adds richness and depth to the dessert.     As the mango season draws to a close, there's one Asian Dessert, a delightful delicacy that captures the essence of this tropical fruit like no other - Mango Sago Dessert. During a visit to a Taiwanese Dessert Shop which boasted 101 Mango Desserts, I was captivated by the enchanting taste and simplicity of this refreshing dessert. The combination of juicy ripe mangoes, chewy sago pearls, and the creamy indulgence of coconut milk creates a heavenly symphony of flavours. Some variations of the recipe also incorporate the tangy sweetness of Pomelo, which adds an exciting twist. However, it's important to remember that Pomelo should be added just before serving, as leaving it in the dessert for too long can turn it bitter. Let's dive into the recipe and savour the last moments of the mango season with this delectable treat!

Ingredients:

Mango Sago Dessert Recipe:

  • 2 Ripe Mangoes
  • 1/2 cup Small Tapioca Pearls (sago)
  • 500ml Coconut Milk
  • 1/4 cup Condensed Milk (adjust to taste)
  • 1/4 cup Sugar (adjust to taste)
  • 1 cup Water

For Garnishing:

  • Few Pieces of Cubed Mangoes
  • Fresh mint leaves for garnish (optional)
  • Rose Syrup (optional)

Method:

  • Wash the Tapioca Pearls (Sago)thoroughly under running water until the water runs clear. Soak the tapioca pearls in water for about 30 minutes.
  • While the Sago is soaking, peel and chop the ripe mangoes. Set aside a few mango chunks for garnish.
  • In a pot, bring water to a boil, and then add the soaked tapioca pearls. Cook the tapioca pearls on medium heat for about 10–15 minutes or until they turn transparent, stirring occasionally to avoid sticking. Once cooked, drain the excess water and rinse the sago with cold water to prevent further cooking. Set aside.
  • In a separate bowl, combine the coconut milk, condensed milk, and sugar. Adjust the sweetness according to your preference.
  • Blend the majority of the chopped mangoes into a smooth puree. Keep a few mango chunks aside for garnishing.
  • In a large mixing bowl, combine the mango puree, cooked tapioca pearls, and the coconut milk mixture. Mix everything well until fully combined.
  • Chill the mango sago dessert in the refrigerator for at least 1 hour or until thoroughly chilled.
  • Once chilled, serve the Mango Sago Dessert in individual bowls or glasses. Garnish each serving with the reserved mango chunks and fresh mint leaves for an extra touch of freshness.

  • Choosing the Right Mangoes: For the best Mango Sago Dessert, opt for ripe and sweet mangoes. Varieties like Alfonso, Thai Water Lily/Gold Lily, or Honey Gold are excellent choices as they have a smooth texture and intense flavour. Avoid fibrous mangoes, as they may affect the smoothness of the puree.
  • Soaking the Tapioca Pearls: Rinse the tapioca pearls thoroughly until the water runs clear before soaking them. This helps remove excess starch and prevents them from sticking together during cooking.
  • Cooking the Tapioca Pearls: When boiling the soaked tapioca pearls, stir them occasionally to ensure even cooking. Overcooking can lead to a mushy texture, so keep an eye on them and drain immediately once they turn transparent.
  • Adjusting the Sweetness: The sweetness of the dessert can be adjusted to suit your taste. If the mangoes are naturally very sweet, you may reduce the amount of sugar or condensed milk. Alternatively, if the mangoes are not as sweet, you can increase the sweetness slightly.
  • Chilling the Dessert: For the most refreshing experience, let the Mango Sago Dessert chill in the refrigerator for at least an hour before serving. You may also add ice cubes to speed up the chilling process, but avoid adding them directly to the dessert to maintain the desired consistency.
  • Pomelo Additions: If you decide to include Pomelo in the dessert, add it just before serving to preserve its vibrant taste and prevent any bitterness. Peel the Pomelo, remove the membranes, and separate the sacs before gently folding them into the dessert.

METHOD:

  • Chill the Milk in the refrigerator for a few hours. 

  • In a blender, add generous scoops of creamy vanilla ice cream with some Ice Cubes.

  • Blend all the ingredients until you achieve a creamy, velvety texture that will make you swoon.

    The Rojapoo Chutney Story In my household - My Mom used to make a quick fix chutney that was a variation of Ulli Mulagu Chalichathu. She lovingly named it Rojapoo Chutney for me when I was a kid, with the sole intention of making me eat Idli and Dosas with this spicy chutney. To entice me, she would convince me that it was made with delicate rose petals, which gave it a pink colour. She added a bit of green chillies for spiciness and drizzled coconut oil over the chutney to enhance the flavours. As I grew older and started cooking myself, I put my own twist on the chutney by substituting green chillies with red chilli powder. To this day, these chutneys hold a special place in my kitchen, reminding me of those cherished childhood memories.

Flavourful Chinna Vengaya Chutney Recipe for a Spicy Twist/Elevate Your South Indian Dishes with Small Onion Chutney

Ingredients:

For Chinna Vengaya Chutney:

Gingelly Oil - 1 Tablespoon
Small Onions/Indian shallots - 1 Cup
Big Onion - 1 No.(Big)
Garlic - 8–10 cloves
Dry Red Chillies - 4 No's.
Kashmiri Red Chillies - 3 No's.
Tamarind - 1/2 a Lemon size
Salt - To Taste
Water - 1/2 Cup

 

For Tempering:

Gingelly Oil - 2 Teaspoons
Mustard Seeds - 1/4 Teaspoon
Urad Dhal - 1/2 Teaspoon
Dry Red Chillies - 2-3 No's.
Asafoetida - 1/8 Teaspoon
Curry Leaves - a Sprig
Jaggery - 1/2 Teaspoon (Optional)

 

Method:

For Chinna Vengaya Chutney:

  • Heat Gingelly Oil in a pan.
  • Add Dry Red chillies and Kashmiri Dry Chillies and fry it on a low flame for a few minutes.
  • Remove it from the oil and keep it aside.
  • In the remaining oil, add small onions, chopped regular onions, garlic, and salt. 
  • Add 1/2 a lemon-sized tamarind and give a quick stir. 
  • Sauté it for about 6–7 minutes until the onions turn slightly brown and translucent. 
  • Remove from heat and let it cool.
  • Grind the onion mixture along with the roasted chillies into a smooth paste. 
  • Avoid adding water while grinding. Set aside.

For Tempering:

  • Heat Gingelly Oil in a pan, splutter mustard seeds, add urad dhal. Let it turn into light golden colour.
  • Add dried red chillies, curry leaves, and asafoetida and fry it on a low flame for a few seconds.
  • Now, pour in the ground onion paste to the pan. 
  • Rinse the mixer jar with 1/4 cup of water and add it to the pan. 
  • Optionally, add half a teaspoon of powdered jaggery for added flavour.
  • Sauté the chutney for a couple of minutes until it thickens to the desired consistency. Avoid overcooking, as the onions are already cooked.
  • Serve the flavourful Chinna Vengaya Chutney with a variety of South Indian dishes like Idli, Dosa, Paniyaram, Uthappam, Ilaneer Dosai, Kal Dosai, Set Dosai, or Rava Dosai.

Tips and Notes:

Variety of Chillies: 

     For an authentic flavour, use a combination of Kashmiri red chillies and Normal dry red chillies. The Kashmiri chillies not only add a vibrant colour but also lend a unique taste to the chutney. However, if you don't have access to Kashmiri chillies, you can omit them and use only the regular dried red chillies.

Roasting Chillies: 

     Take care not to overcook or burn the dried red chillies while sautéing them. They can quickly turn bitter if exposed to high heat for too long. Sauté them just until they become plump and aromatic.

Sautéing Onions: 

     When sautéing the small onions and regular onions, aim for a golden brown colour and translucent. This helps enhance the depth of flavour in the chutney.

Grinding the Onion Mixture: 

     While grinding the onion mixture along with the roasted chillies, refrain from adding water. This ensures a thicker consistency and concentrated flavours in the chutney. However, if needed, you can add a small amount of water sparingly.

Tempering the Chutney: 

     The tempering process adds an aromatic touch to the chutney. Allow the urad dhal to turn golden brown before adding the mustard seeds, dried red chillies, curry leaves, and asafoetida. This enhances the overall flavour profile of the chutney.

Adjusting Consistency:

     If you prefer a thinner consistency for the chutney, you can add a little water while sautéing the onion mixture or during the tempering stage. However, be cautious not to make it too runny, as the chutney should have a slightly thick texture.

Adding Jaggery:

     Including jaggery in the chutney helps balance the flavours by adding a subtle sweetness. It can be omitted if you prefer a purely spicy chutney or adjust the amount according to your taste preference.

Serving Suggestions: 

     The Chinna Vengayam Chutney pairs well with various South Indian dishes like Idli, Dosa, Paniyaram, Uthappam, Ilaneer Dosai, Kal Dosai, Set Dosai, or Rava Dosai.  However, feel free to experiment and enjoy it with other dishes or as a dip for snacks.

This easy, no-fail recipe gives you the perfect golden, lacy dosa—without any soaking or fermentation! After countless trials (and many not-so-crispy dosas later!), I finally cracked the secret to crispy perfection. The key? A thin, watery batter!

    This quick and easy Rava Dosa recipe delivers the same restaurant-style crispiness, all without soaking, grinding, or fermentation. Whether you prefer the classic plain Rava Dosa, Onion Rava Dosa, or a spiced version, this guide will help you nail the perfect dosa every time!

A Brief History of Rava Dosa

    While dosas come in many forms, including quick-fix options like Maida Dosai and Gothumai Dosai, Rava Dosa is believed to have originated as a solution during times of rice scarcity. Some suggest that, much like Rava Idli, which was created by MTR Hotels during the Bengal famine, Rava Dosa emerged as a practical invention when rice was limited. The adaptability and creativity in response to ingredient shortages have often led to the development of unique and flavourful dishes like this one.

    Though the exact origins of authentic Rava Dosa are not well-documented, it is widely believed to have originated in Karnataka, particularly among the Tulu Brahmins of the Mangalore-Udupi region. This crispy dosa variation gained popularity within Karnataka and eventually spread to other South Indian states, where it became an integral part of the regional cuisine. Today, it remains a cherished dish across India.

Ingredients for Rava Dosa

For the Batter:

  • 1 Cup White Rava/Semolina
  • 1/2 Cup Rice Flour
  • 1/4 Cup All-purpose Flour
  • 2 Big Onions, finely chopped
  • 2–3 Green Chillies, finely chopped
  • 1 Tablespoon Ginger, grated
  • 1 Tablespoon Cumin Seeds
  • 1 Tablespoon Peppercorns, crushed
  • A handful of Fresh Coriander Leaves, chopped
  • Salt to taste
  • Water as needed (to make a thin, watery batter)

For Cooking:

  • Oil – for drizzling

How to Make Crispy Rava Dosa (Step-by-Step Guide)

Step 1: Prepare the Batter
  • In a large mixing bowl, combine semolina, rice flour, and all-purpose flour.
  • Add chopped onions, green chillies, grated ginger, cumin seeds, crushed peppercorns, and coriander leaves.
  • Add salt and gradually mix in water, stirring continuously to form a thin, watery batter. Ensure no lumps remain.
  • Cover and let the batter rest for 20 minutes to absorb flavours.

Step 2: Adjust Consistency

  • After resting, stir the batter. If it thickens, add more water to restore its free-flowing consistency.

Step 3: Heat the Tawa & Pour the Batter

  • Heat a non-stick dosa tawa on medium heat. Make sure it’s well-heated.
  • Pour a ladle of watery batter from the outer edge towards the centre, creating a lacy effect. Fill any gaps as needed.

Step 4: Cook the Dosa

  • Drizzle a few drops of oil around the edges.
  • Cook on medium heat until the dosa turns golden and crispy.
  • Carefully lift with a spatula and fold it into a half-moon or roll it.
  • Remove and serve hot.
  • Repeat for the remaining batter, stirring the batter each time before making a new dosa.

Step 5: Serve & Enjoy!

Here's a simple and delicious recipe for Pineapple and Cucumber Juice - The Perfect Refreshment for Summer:

Ingredients:

Pineapple - 1 Cup
Cucumber (medium-sized)  - 1 No.
Lemon  - 1/2 a Lemon
Cold Water - 1 Cup
Ice Cubes - a Few (Optional)

 

Add-ons (If preferred):

Sweetener of your choice
Mint Leaves - a Few
Cucumber/Pineapple slices - to Garnish


Method:

  • Using a knife, slice off the top & bottom part of the Pineapple, and cut off the outer layer. 
  • Slice the Pineapple and cut it into chunks.
  • Slice off the ends of a cucumber and cut it into pieces.  Can peel the cucumber, if preferred.
  • Place the pineapple chunks and chopped cucumber into a blender or juicer.
  • Squeeze the juice of half a lemon into the blender.
  • Add the cold water to the blender.
  • Blend the ingredients on high speed until smooth and well combined.
  • If desired, strain the juice using a fine-mesh strainer or cheesecloth to remove any pulp.
  • Pour the juice into glasses filled with ice cubes, if desired.
  • Give the juice a quick stir and serve chilled.
