     As said by Hippocrates over 2300 years ago -

           "Let your Food be thy Medicine and Medicine be thy food." 

 By saying so, he meant about prevention - by optimizing our ability to fight against infections and adapt to the vulnerable environmental condition. Garlic is one of the most commonly used food items around the world. It is hard to imagine a cuisine which doesn't use garlic.  Garlic is widely accepted and used as a condiment and food.
     Garlic is also one of the few herbs that were and still used in all 3 great healing systems of the world—Ayurveda, Traditional Chinese Medicine, and Traditional European Medicine. Garlic has powerful properties, that it is widely used as Food and Medicine making it a Super Food.

In Ayurveda :

  • According to Ayurveda, Garlic is considered as Maha Oushadha (which means Great Medicine in Sanskrit). 
  • Ayurveda considered garlic as a tonic, hot, digestive, aperient (to relieve constipation), cholagogues (promotes discharge of bile) and alternative (restores normal health).
  • Garlic bulbs were macerated with honey or other sweeteners or crushed into foods to help relieve coughs and mucus conditions, fevers, swellings, gonorrhea, colic, rheumatism, and worms. 
  • Garlic pods are boiled in milk and consumed in small doses to stimulate digestion, hysteria, flatulence, sciatica, and heart disease.

In Traditional Chinese Medicine :

  • According to TCM, Garlic has a special influence on the organs. 
  • They were used to balance the Qi/Chi of Spleen (which transforms and assimilates food and has to do with metabolism and energy production);  Kidney (which stores vital energy and sends it out to other organs and tissues);  Stomach (which break down the food and dissimulates the food to get it ready for the spleen). 
  • It was used to remove toxins from the body.
  • It is also believed to Balances the Qi of Water, 
  • It also eliminates the noxious effects of putrid meat and fish.

In Traditional European Medicine :

  • Garlic was an important food and medicine of the Egyptians, Greeks, Romans, Assyrians, and Egyptians. 
  • Garlic pods macerated in oil were used to treat skin diseases.
  • It is believed stimulate milk production in breast feeding moms.
  • It was used as an antibiotic, to fill rotten teeth, (Garlic pods were crushed and mixed with vinegar).
  • Hippocrates prescribed it as a fumigant for aiding in the release of the placenta.

  • Macerated garlic pods mixed with honey is good for shrew bites and dog bites.

  • Excellent for bruises, even after they have swollen into a blister.

  • Garlic, when taken along with coriander acts as an aphrodisiac.

     Garlic is filled with health benefits.  Eating at least one clove of garlic daily can help you keep a lot of health conditions at bay.  It is rich in antioxidant and thus prevents the growth of cancer cells.  Crush or chop the garlic cloves and leave it aside for at least 15 minutes.  This helps in the secretion of active agents in garlic -  the 'allyl sulphide compounds', which are anti-cancer compound.Sulfur in Garlic helps to lower Oxidative Stress and unwanted inflammation.
     The 'Diallyl Sulphides' in Garlic can improve 'iron metabolism', as it helps increase the production of a protein called ' Ferroportin'. Garlic is a good source of 'Selenium'. It has innumerable medicinal benefits.

Cancer Treatment :

As it is rich in Antioxidant, daily intake of garlic has been found to lower risk of many types of cancer. It is believed to prevent colon cancer, rectal cancer, stomach cancer, breast cancer, prostate cancer, bladder cancer and lung cancer.

Cardio Vascular Benefit : 

The Hydrogen Sulfide (H2S) is produced by the Red Blood Cells, by taking the Sulfur molecules in garlic called Poly Sulfides.  The Hydrogen Sulfide helps our blood vessels to expand and thus helps in good blood circulation.

Weight Loss : 

Garlic helps to regulate the number of fat cells in our body. The sulphur compounds 1,2-DT (1,2-vinyl-dithiin) present in garlic has anti-inflammatory properties, which inhibit the conversion process of the fibroblastic cells (called "preadipocytes") which evolve into full-fledged fat cells (called "adipocytes") under certain metabolic circumstances. Thus fighting against Obesity.

For Fungal Infections :

Topical application of garlic gel to the skin may treat ringworm, jock itch, and athlete’s foot (mince a clove of garlic and mix it with aloe vera, coconut oil or olive oil and apply to the affected area). Do not apply undiluted garlic, as it can burn the skin.

As an Antiseptic :

Garlic has antibacterial and antiviral properties that help control bacterial, viral, fungal, yeast and worm infections. Fresh garlic is believed to play a vital role in preventing food poisoning by killing bacterias like E. coli, Salmonella enteritidis, etc.


  FOOD RECOMMENDATION :

  • Garlic should be added to our diet on a regular basis.  Try to include at least 1 or 2 cloves in an individual food portion.
  • With their unique combination of flavonoids and sulphur nutrients, it adds aroma, taste and nutrition to our dishes.
  • To get best results out of garlic, chop or crush them and leave them aside for at least 15 minutes before cooking or eating.
  • Do not cook them immediately or change their PH value by adding them in acidic or alkaline substances, as that will totally destroy their medicinal properties.
  • The best way is to eat them 'RAW'.


  Notes :
  • Chewing parsley helps to get rid of the pungent smell of raw garlic from the mouth.

GARLIC RASAM
     Garlic being Nature's wonderful herb with proven therapeutical values and ability to treat ailments should be included in the daily diet, which can make you healthy and boosts immunity. Garlic is a wholesome medicine in the form of food - Food as Medicine.  Inducing raw or cooked garlic in your daily diet can prove beneficial.
    Rasam is a complex recipe with different spices and ingredients that according to me requires a skill to perfect it.  Watery natured Rasams infused with a balance of tastes and flavours are a treat by themselves.  Though a humble dish served along with numerous other dishes in a Virundhu/Sadhya(Banquet).  Rasam takes a unique place in the menu and plays a pivotal role in digestion.  As such, a lunch menu with a simple Rasam, Veggie, and Appalam can be complete and all the more contenting.
     Among the varieties of numerous Rasams, Garlic Rasam imbibes the goodness of garlic and the spices added to it.  It is a good home remedy for cold and flu. Enjoy this wonderful Garlic Rasam with Rice or drink it as a soup.

GARLIC

GARLIC RASAM

INGREDIENTS :

For Rasam :

Tomatoes - 2 Nos.
Tamarind - 1 Lime Size.
Rasam Powder - 2 Tbspns
Turmeric Powder - 1/2 Tspn
Salt - To Taste
Jaggery / Sugar - A pinch (Optional)

For Tempering :

Sesame Oil/Ghee - 2-3 Tspns
Mustard Seeds - 1/2 Tspn
Asafoetida Powder - A Pinch
Dry Red Chillies - 1-2 Nos.
Garlic - 8-10 Cloves
Curry Leaves - 2 Sprigs


For Garnishing :

Coriander Leaves - Few

METHOD : 

  • Soak Tamarind in water for few minutes and extract tamarind juice out of it.
  • Add Chopped Tomatoes to 1 Cup of Water along with Tamarind extract and Rasam Powder.
  • Boil this for about 5-8 minutes and leave it aside to cool down. 
  • Mash the Tomatoes and remove the skin.
  • Add Turmeric Powder, Salt and Jaggery to the Tomato- Dhal water and allow it to boil for few minutes on a low flame.
  • Heat Sesame Oil/Ghee in a pan, lower the flame, splutter Mustard seeds, Curry Leaves, and Dry Red Chillies.
  • Slightly crush the Garlic cloves and saute it until raw flavour goes for few minutes.
  • Add Asafoetida to the above and give a quick stir.
  • Pour Tomato - Tamarind mix to the seasonings and mix well.
  • Allow it to boil on a low flame for few minutes.
  • Switch off the flame, garnish with Coriander Leaves and immediately cover the Rasam bowl.
  • Serve it hot with Rice.

NOTES :

  • Can add more Garlic if preferred.  
  • I just slightly crush the Garlic Cloves and saute them in ghee/oil for Garlic Rasam.
  • Seasoning Garlic Rasam with Ghee gives a nice flavour to the dish, but it is truly optional.
  • Can substitute ghee with any vegetable oil.
  • Adding Jaggery also is purely optional, but it compliments well with Tamarind.
  • Do not over boil the Rasam, which will spoil the flavour, taste and the nutritious value.
  • Covering the Rasam bowl immediately after the seasonings are added is to retain and infuse the flavours into the Rasam.

     Strawberries mainly consist of Water and have low Carbohydrate & Fat content.  Most of the Carbohydrate comes from the natural Sugars in the fruit - Glucose, Fructose and Sucrose. But they also contain a decent amount of dietary fibre. Strawberries have a relatively low Glycemic Index (GI) score of 40. It is also loaded with Vitamins & Minerals like

Strawberries are fully ripe at the time they are picked and do not continue to ripen after harvesting. Here are a few tips on how to select & how to store strawberries to make your berries last as long as possible.
  • Choose Strawberries that have a bright red colour, a natural shine and fresh-looking green caps.
  • Strawberries should always be refrigerated and kept dry until just before serving.
  • With green stems still intact, rinse berries under cool water.
  • After rinsing, gently blot dry.
  • Remove the green caps from the berries with a slight twist or with the point of a knife.

     Cameroon Highlands in Malaysia is famous for its Strawberry cultivation and most of the Strawberry supply for the country comes from the place. During our visit to Cameroon Highlands, when we saw the markets flooded with Strawberries we bought boxes & boxes impulsively only to wonder what to do with them, once we satiated our cravings for fresh & juicy Strawberries. I stored them in the freezer and it lasted for several months.
      Refrigerating or Freezing is the best way to store Strawberries. Freezing them is an easy way to make them last longer while keeping their nutritional value.

HOW TO FREEZE & STORE STRAWBERRIES:

  • Rinse the Strawberries and gently blot dry the fruits.
  • Hull the Strawberry(slice off the green stem at the top)
  • Place the Strawberries(top portion down) on a tray lined up with a wax/butter paper. 
  • Leave it in the freezer uncovered for about 24 Hours.
  • Transfer the Strawberries to a Freezer Bag or an airtight container.
  • Store it in the Freezer.
  • Frozen Strawberries can be stored for several months.

 

HOW TO USE STRAWBERRIES

     Strawberries are most flavourful at room temperature & they taste the best when fresh. They can be enjoyed just as they are or sliced in cereals, salads and served with any meal, any time of day.
  • Convert it into Juice/Smoothies/Milkshakes.
  • Add them into your Cocktail/Mocktail.
  • Make tasty Puddings, Panacotta, Parfaits or Icecreams.
  • Can make Strawberry stuffed Pancakes or Serve Pancakes with sliced Strawberries and a drizzle of honey/maple syrup.

     Yellow Moong Dhal are Mung Beans that have been skinned and split from the whole Green Moong Bean. They are flat and yellow in colour. Yellow Moong Dhal is extremely light and very easy to digest, all the more they are very easy to cook.  Moong Dhals are considered to be super foods as they are packed with protein and very low in carbohydrates.
     Compared to other dhals, Moong Dhal is one of the low carb pulses. As it is one of the easily digestible dhal, it is free from gas too. But it lacks fibre compared to Green Moong Dhal. It is a good source of Protein for vegetarians.

YELLOW MOONG DHAL - USAGE, HEALTH BENEFITS & AYURVEDIC QUALITIES



USES OF MOONG DHAL :

  • Wash and remove any debris from the Dhal before cooking.
  • It can be cooked as such, in a sauce pan or can also be pressure cooked.
  • Can also soak Yellow Moong Dhals for about 3-4 hours before cooking.
  • Soaked Moong Dhal is used in a South Indian dish called Kosmalli.
  • Some recipes call for dry roasting the Dhal until fragrant before cooking them.
  • Moong Dhals are dry roasted for recipes like Ven Pongal, Sarkkarai Pongal, Parippu Pradhaman, Moong Dhal Sundal etc.,
  • Soak or dry roast/just clean and wash the Dhals, add enough water to cover the dhal and cook as required for the recipe.
  • They are also used in Porridge and Kichdis.
  • Moong dhal Vadais are a popular snack in South India
  • Cooked Moong Dhals do not hold their shape well.

  • Pre-packed Moong Dhal is easily available in grocery stores.
  • Check the expiry date on the package before buying them.
  • Also, ensure that there is no evidence of moisture.
  • Moong Bean tends to lose its freshness over a long period of time.
  • So buy the required amount for your household use.
  • Store them in airtight containers, free from moisture in a cool and dry place.

 TULSI & TURMERIC TEA

     As Corona Virus (COVID-19) infections are strolling in, WHO has mentioned that it is important to take precautions that include washing hands frequently, covering face while sneezing and coughing, use a mask regularly and avoid public gatherings. While these are the basics that will help you protect from the virus, it is important to boost your immunity to stay safe from the disease. I grew up hearing a lot about Home Remedies and simple concoctions prepared with easily available ingredients from the Pantry. For any kind of ailment even for simple ones my Parents use to start with Home Remedies before visiting the Doctor. For Coughs, Cold, Flu, Dysentry, Indigestion, Body pain etc., & etc.,  And trust me it works!!!

INGREDIENTS:

For Tulsi & Turmeric Tea:

Water - 3 Cups
Tulsi Leaves - a Handful
Turmeric Root - 3 Slices
Ginger - 3 Slices
Honey - 1 Tbspn(Optional)
Lemon Juice -  To Taste


METHOD:

  • Clean, Peel and cut Turmeric Root & Ginger into slices.
  • Slightly pound them up using a pestle or a heavy object.
  • Clean & Wash the Tulsi Leaves.
  • Boil the Water in a Saucepan.
  • Once the Water boils, add the Tulsi Leaves, pounded Turmeric Root & Ginger to the Water and boil it on a low flame for about 10-15 minutes.
  • Steep longer for a stronger flavour and more powerful health benefits.  
  • Switch off the flame and keep it aside for few minutes.
  • Strain the tea into a mug.
  • Add in the honey along with a dash of Lemon Juice & mix well(optional).

     Where the lyrical says that I have a small bit of land in the Land of Coconuts and that is our Gods Own Country - Kerala.  Today is Kerala Piravi, the day the land was born. The State of Kerala was created on November 1, 1956, after Indian Independence on 15th of August 1947.
     There is also a mythological belief that Kerala was formed when Lord Parasurama(One of the incarnations of Lord Vishnu) threw his axe from Gokarnam southward across the ocean in rage. The action was done as repentance of killing the Kshatriyas, the sea receded and a narrow strip of land showed up from underneath. Henceforth Kerala is popularly called as "Gods Own Country".  Kerala is celebrating its 63rd Kerala Piravi Day this year and The President of India Ramnath Govind has recently called Kerala as the 'Global face of India.' 
      "Keralam" means "Land of Coconuts".  Coconut Tree is called as Kera in Sanskrit and Keram in Malayalam.  Keralam is also considered as a nickname for the State used by locals due to the abundance of coconut trees. So commemorating to the day and to Gods own Country - Kerala, writing about Coconuts seemed to something quite apt for the day.
     Coconut Tree is considered as 'KALPA VRIKSHA', which means, 'DIVINE TREE' which can fulfil all wishes. But in real terms, it could be termed as ' a tree which provides all that is necessary for a living'.  From the root to its leaves, each and every part of a coconut tree proves useful and is loaded with therapeutic benefits. Coconut is a versatile fruit/nut/seed.  Coconuts can be used as such, sliced, shredded or grated.  The flesh can be used to extract fresh Coconut Milk and Coconut Oil.  Even the Coconut Water within the Nut is used from Matured Coconuts and from Tender Coconuts.

    Only when I started living in Malaysia, I noticed that large batches of Dates were sold during Ramadan Season. The relevance never realized before and the significance of Dates during Ramadan fasting was a new learning for me then. Since the fruit was discovered, which can be traced back to almost 5320 BC., it has been known for its healing properties. Since then, Dates have served as a staple for people in the Indus Valley, Middle East and North Africa.  Mainly cultivated in these regions & in tropical regions.

    Dates are highly beneficial due to the innate composition of macronutrients and many other healthy elements.  Dates are known for their high content of natural sugars. It’s interesting to notice that dried dates have a higher calorie content when compared to the fresh fruit. The calorie content of Dates is one of the most important fact that makes this Middle East fruit a world favourite.

    It is said that Prophet Muhammad broke fast with three Dates and water. And from thereon Dates has been associated with Ramadan(Ramzan). The fruit is mentioned more than 20 times in the Quran.     Dates are the fruit of the date palm tree, which is grown in the Middle East, North Africa & in many tropical regions around the world.  Mostly Dates are sold in dried form.  It can be eaten fresh too. A wrinkled skin indicates they are dried, whereas a smooth skin indicates freshness.  Dates have an excellent nutrition profile.

    Dates can be eaten fresh or dried, but it is mostly sold & eaten in dried form.  Dried Dates have higher calorie content than a fresh fruit.  Most of the calories in Dates come from Carbohydrates & a very small amount of Protein.     Most Dates are left to hang on the trees to “cure” and dry a little before being harvested, so they’ll last longer once picked. These are the “fresh dates” available at many grocery stores, and they are also absolutely delicious.

Here are a few tips on how to select & how to store Dates to make them last as long as possible.

  • Fresh dates can be wrinkled, but they shouldn’t feel hard. 
  • Look for fresh dates that are fleshy looking and have a slightly glossy appearance to their skin. 
  • Avoid dates that have crystallized sugar on their skins, which means that they are not fresh.


HOW TO STORE DATES

    Although Dates are considered dry fruits, the ideal flavour is optimal when they have moisture and are stored properly. Dates can be stored at room temperature, in the refrigerator, or frozen indefinitely.  The best approach for handling dates, especially if large quantities are purchased, is to freeze them. 

  • Dates taste best when they are able to retain their moisture, so storing them properly is critical. If you plan to eat your dates within a week, store them in an airtight container in your pantry. 
  • Refrigerating is the next best thing to keep them fresh for up to 30 days. Keep in mind that after 30 days the dates do not go bad, they just do not taste as mouthwatering as they do fresh.
  • Dates may be frozen in the container they were purchased in, and keep indefinitely.  Take them out a few hours before you are ready to consume to allow for thawing. When frozen and thawed out, none of the flavour is lost and the moisture stays intact.

    

HOW TO USE DATES

     Dates are most flavourful & they taste the best when moist. They can be enjoyed just as they are or sliced into cereals, salads and served with any meal, any time of day.
  • Eat Dates as such.  Works perfect for an indulgent snack. 
  • Stoned Dates can be stuffed with nuts like Almonds, Pecan, Walnut, Pistachios etc., or can stuff them with candied items, like oranges or ginger.
  • Convert it into Juice/Smoothies/Milkshakes.
