Growing up, we never baked cakes at home, but it was a tradition for my dad to buy beautifully iced Christmas cakes from JM & Sons, a beloved bakery in Coimbatore. These cakes were a special treat, with their firm, sweet royal icing and those charming rose-shaped sugar flowers on top. I adored them—not because they were sugary delights, but because they were roses. My love for flowers started early, and even though adulthood has made me a bit more restrained, those sugar roses will always hold a special place in my heart.

Traditional Vs. Vegan/Eggless Royal Icing

    However, Traditional royal icing relies heavily on egg whites or meringue powder, which often left me searching for a better alternative. After years of experimenting, I finally perfected a Vegan Royal Icing or simply Eggless Royal Icing, in my terms, delivers the same glossy finish and firm set—without eggs, meringue, or any substitutes that mimic them.

    For those who, like me, prefer a simple yet effective recipe, this one is a game-changer. It’s silky, pipeable, and sets beautifully, making it ideal for cakes, cookies, and intricate decorative designs. Plus, there’s no risk of an overpowering eggy taste or raw egg concerns.     Are you tired of royal icing that tastes overwhelmingly eggy? I was too! After countless experiments, I’ve finally nailed the perfect vegan royal icing—one that’s silky, pipeable, and sets beautifully without a single egg or egg substitute like meringue powder in sight.  Or simply if you are in search of Vegan Cake or Cookie Decoration, then you have landed into the right recipe here.

    This simple recipe uses just three ingredients and works wonderfully for cakes, cookies, and decorative piping. Bonus? No more raw egg worries! This is the best Vegan Icing in my terms.

Confectioners' Sugar or Normal Sugar?

    While both normal powdered sugar and confectioners' sugar work well for this recipe, I have used Icing Sugar here for a smoother texture. But if you don’t have it on hand, you can powder and sieve regular white sugar—it works just fine!

One other ingredient I’ve added to the icing is Lemon Juice, which helps avoid crystallisation of sugar and also helps to harden the icing once set.

    The trickiest part is getting the royal icing to land on the cakes in the perfect consistency. Sometimes, we might need more water; sometimes, it needs less. But the wonderful thing is that you can manipulate the icing to get the proper consistency by adding more water or more Sugar.  Just keep in mind to add water in drops, though! It’s awesome! So, you see—no strict rules, yet it is a foolproof recipe. I know why I love this royal icing recipe.

  • 3–5 tablespoons (45–75ml) Cold Water (adjust for consistency)
  • 1/2 teaspoon (2.5ml) Glycerine (optional – keeps icing soft, skip for a firmer set)
  • 1 teaspoon (5ml) Lemon Juice or Aquafaba (optional – helps with structure and setting)

Note: Start with 3 tablespoons and add the remaining water drop-by-drop until it reaches a thick, ribbon-like consistency that coats the back of a spoon.


Method: Step-by-Step Guide to Making Simple Vegan Royal Icing

    Achieving the perfect egg-free royal icing is all about the right consistency. Follow these steps to make a silky, smooth, and glossy icing that’s ideal for decorating cakes, cookies, or festive bakes!

Step 1: Sift the Icing Sugar

  • Begin by sifting the icing sugar into a clean, dry mixing bowl. This helps remove any lumps and ensures a super smooth texture in the final icing.

     

    Pro Tip: If your icing sugar is particularly clumpy, sift it twice for an extra-fine finish!

Step 2: Add Liquid Ingredients

  • Start by adding 4 tablespoons of water and your choice of lemon juice or aquafaba (if using).

    Pro Tip: Do not over-whisk. We want to incorporate the liquids gently to avoid air bubbles. If you see a bubble, prick it with a toothpick immediately.

  • Stir well using a spoon or spatula until the mixture becomes smooth and lump-free.

    Pro Tip: Lemon juice helps balance the sweetness and adds a subtle tang, while aquafaba enhances the icing’s structure—making it a great choice for intricate decorations.

Step 3: Add Glycerine (Optional)

  • If you want a soft-set icing (perfect for cookies), mix in a few drops of glycerine.
  • If you prefer a hard-setting icing (ideal for intricate decorations that need to hold their shape), skip the glycerine.

     

    Pro Tip: A hard-set icing is best for decorating Christmas cakes or wedding cakes, while a softer one works well for cookies that need a bit of chew.

Step 4: Adjust the Consistency

This is where you fine-tune your icing depending on its purpose:

  • For thicker icing (best for piping & details): Add more sifted icing sugar, a tablespoon at a time, until you reach a stiff but spreadable texture.
  • For runnier icing (ideal for glazing cakes/cookies): Add a few drops of water at a time and stir well until you achieve a smooth, flowing consistency.

     

    Pro Tip: If you’re decorating cookies, use a thicker icing for outlining and a runnier version for flooding the inside—it creates a flawless professional finish!

Step 5: Beat Until Glossy

  • Once you’ve reached the desired consistency, use a whisk or electric mixer to beat the icing for about 1 minute until it becomes smooth, glossy, and easy to spread.

     

    Pro Tip: Overmixing can introduce too many air bubbles, so mix just until the icing looks silky and shiny. If bubbles form, gently tap the bowl on the counter to release them.

  • Classic royal icings are made with meringue powder, but this version is slightly harder, just like the ones found in our local bakeries in Coimbatore & Kerala.

  1. Here's a recipe to ruin Christmas. Even if you spot that "two cups" should equate to 500g, not 250, you get icing you can drink

      It is always a pity when a lack of basic arithmetic leads one to such a dramatic conclusion.

      To clarify for the benefit of all: while 2 cups of water does indeed weigh 500 grams, 2 cups of light, sifted icing sugar weighs exactly 250 grams. Using your suggested 500 grams would produce something closer to putty than the elegant, porcelain-like glaze required for a traditional fruit cake. The flawless finish you see in my photographs was achieved using these exact specified measurements.

      One must also remember that technique and climate are as vital as the ingredients themselves. In a humid environment, much like here in Malaysia, icing sugar acts as a humectant, absorbing moisture from the air. It is essential to understand that sugar works differently in different weather conditions; what sets perfectly in a dry kitchen may require a steadier hand in the tropics. To achieve the results shown, the liquid must never be poured all at once; it must be added drop by drop until a thick, ribbon-like consistency is reached.

      This is specifically a pourable icing designed to flow smoothly over the cake and then set into a firm, professional finish. It is truly unfortunate that your recipe was ruined, but precision is a virtue in the kitchen.
