Often whipped up during tea time as a naalu mani palaharam (the sacred 4 PM snack hour), it's as nourishing as it is nostalgic. While a similar quick-fix Aval Nanachathu has its own fan base, this version with toasted rice flour brings a deeper flavour and bite. Whether served with Kattan Chaaya  or Kattan Kaapi or Milk Tea, it’s the kind of teatime treat that creates memories.

    There are dishes that you simply eat, and then there are dishes that you experience. Roti Jala - It was Love at first Bite!   A golden lace pancake, a doodle of deliciousness, and an absolute staple at any proper Malaysian celebration. And for me?     I use coconut milk quite often and liberally in my kitchen for a myriad of dishes — from soups, stews, curries, snacks, desserts, puddings, payasams and even in baked goodies. Coconut milk brings its own richness, depth and that exotic creamy vibe to recipes — be it my style Green Peas Ghee Rice, or comforting Paal Kanji, or extraordinary Thengai Paal Murukku or Puerto Rican Tembleque, Southeast Asian dishes like Nasi Bunga Telang, or Red Rubies in Coconut Milk or Pulut Hitam finished off with a lush drizzle. And don’t even get me started on the magic it does to Indian Payasams and Pradhamans!

    But every time I make coconut milk from scratch, I'm taken straight back to the good old days in Kerala. Especially during wedding preparations in my Mum and Dad's Tharavadu (ancestral home).

    Ah, the infamous memories of being nudged into eating something for its alleged health benefits! That's exactly what comes to mind when I think of Vallarai Keerai (Indian Penny wort). My experience with this green was less than fond, and I suspect many of you can relate to these childhood recollections.  

    Introducing Pegaga - the Indian Penny wort, or Vallarai Keerai, as it's known in Tamil, is a green that’s woven into the fabric of many childhood memories, including my own. Back in the day, this leaf was almost a celebrity in local communities across India for its reputed health benefits, particularly its ability to boost memory power. My mother, ever the health enthusiast, believed fervently in its benefits. As a result, Vallarai Keerai featured prominently in our meals, often paired with green moong beans to soften its bitter notes. As a child, I wasn't a fan—mostly I’d just gulp it down to avoid the formidable gaze of my mum. While I can’t vouch scientifically for its memory-enhancing properties, it certainly quickened my pace at finishing meals—I was quite the slow eater back then!

Kayalpattinam Vellai Biriyani or Ahani Mutton Biriyani Recipe

"Kayalpattinam Vellai Biryani, a symphony of coastal flavours & authentic Muslim culinary artistry."

Ingredients:

For Marinating the Mutton:

• 1 kg mutton pieces
• 1 cup curd
• 1 tablespoon ginger-garlic paste
• Green chillies, as per taste
• Salt to taste
• 4-6 cardamom pods
• 3 sticks of 1" size cinnamon
• 6–8 cloves
• 2 teaspoons fennel seeds
• 1 bay leaf
• Handful of coriander leaves, mint leaves, and pandan leaves

For Nuts Paste:

• 2 teaspoons of Almonds
• 2 teaspoons of Cashews
• 2 teaspoons of Poppy seeds  (soaked for 30 minutes)

Coconut Milk:

• 1.5 cups thick Coconut Milk
• 1.5 cups second extract Coconut Milk

For Cooking the Rice:

• 5 cups Seeraga Samba Rice (soaked for 20–30 minutes)
• Coconut Oil and Ghee for tempering
• 6 -8 Cardamom Pods
• 3 sticks of 1" size Cinnamon
• 6–8 Cloves
• 2 teaspoons Fennel Seeds
• 1 Bay Leaf
• Finely chopped Pandan Leaves
• Green Chillies, slit
• Finely chopped Onions
• 2–3 tablespoons Ginger-Garlic paste
• Handful of Coriander Leaves and Mint Leaves
• Lemon juice
• Handful of Raisins
• Salt to taste

For the Dhum Effect:

• Coconut shells turned into hot coal
• A heated Griddle
  

Method:

Marinating the Mutton:

• Combine mutton with curd, ginger-garlic paste, green chillies, salt, cardamom, cinnamon, cloves, fennel seeds, bay leaf, coriander leaves, mint leaves, and pandan leaves.
• Allow to marinate for 30 minutes.

Cooking the Mutton:

• Cook marinated mutton until tender, adding water as needed. 
• Cook until the mutton turns soft and tender.

Preparing Nuts and Poppy Seeds Paste:

• Soak almonds, cashews, and poppy seeds for 30 minutes.
• Grind into a fine paste, adding very little water.

Cooking Mutton with Coconut Milk:

• Add ground paste to cooked mutton.
• Cook on low flame for a few minutes to avoid thickening and scorching.
• When it starts to boil, add thick coconut milk and second extract coconut milk.
• Boil on very low flame, stirring occasionally. Ensure it doesn't thicken or curdle.
• Drain meat, saving coconut milk broth for later.

Cooking the Rice:

• Wash & Soak the rice in ample of water for about 20–30 Minutes.
• Heat coconut oil and ghee. Temper with cardamom, cinnamon, cloves, fennel seeds, and bay leaf.
• Add finely chopped pandan leaves. Fry until shrivelled.
• Fry slit green chillies on low flame for texture and spiciness.
• Sauté onions until water content is removed, retaining colour without browning.
• Add ginger-garlic paste, coriander leaves, and mint leaves. Sauté until aromatic.

Cooking Rice with Mutton:

• Add cooked mutton, salt, and curd. Cook on very low flame for about 5 minutes.
• Pour in saved coconut milk broth and enough water (approximately 7.5 cups for 5 cups (1 kg) of rice and meat). Mix well. Boil on very low flame, stirring occasionally to prevent curdling.
• Add soaked and well-drained rice, pour in lemon juice, and let it boil on a high flame.
• Once water reduces to half, reduce the flame to medium. Cook for a few more minutes.

Unveiling the Dhum Effect: 

Method: 

• Transfer the biriyani pot to a heated griddle.  As the biriyani pot rests over the griddle, the magic unfolds. The seeraga samba rice absorbs the flavourful essence from the mutton and spices, creating a symphony of aromas that will make your kitchen the stage for a culinary masterpiece. 
• Burn the coconut shells and allow it to burn out for a few minutes until the coconut shells turn into hot coal.

• Transfer it onto the biriyani pot lid.  This will infuse a smoky richness into our creation. This traditional technique elevates the biriyani, adding a layer of complexity that tantalizes the senses.
• Cook on the lowest flame for 15–20 minutes, allowing the griddle to heat the pot from the bottom and the hot coal from the top, mimicking the traditional dhum effect.

• After the tantalizing wait, switch off the flame, and let the biriyani pot sit undisturbed for another 10 -15 minutes. This allows the flavours to intermingle, reaching their crescendo.
• Now, with bated breath, lift the lid. The aromatic cloud that escapes is not just a fragrance; it's the embodiment of Kayalpattinam's culinary artistry.

Notes & Tips:

Cooking Mutton:

• After marinating, ensure to cook the mutton until it is tender, adding water as needed.
• When adding nuts and poppy seeds paste, cook on low flame to prevent thickening and scorching.
• Add thick coconut milk and second extract coconut milk on very low flame, stirring occasionally. Avoid thickening and curdling.

Tips for Cooking Rice for Kayalpattinam Biriyani:

• Use Seeraga Samba Rice for an authentic taste.
• Opt for coconut oil for tempering, providing an authentic flavour.
• Fry pandan leaves for a unique texture and flavour.
• When sautéing onions, retain colour without browning to preserve the biriyani's white colour.
• Cook meat and curd on a very low flame for approximately 5 minutes.
• While boiling coconut milk broth, ensure a very low flame, stirring occasionally to prevent curdling.
• The biriyani requires approximately 7.5 cups of water (including coconut milk broth) for 1 kg of rice and meat.

    As we savour the Kayalpattinam Vellai Biriyani or Ahani Mutton Biriyani, let's appreciate not just the flavours on our plate, but the heritage it carries. Ingredients:

For Honey Cake:

• Vanilla Cake (Refer to Vanilla Milk Cake Ingredients)
• 1/4 cup Honey
• 1/2 cup Water
•  2 Tablespoons Sugar
  
• 1 cup Mixed Fruit Jam (warmed for a delightful spread)
• 1 cup Dessicated Coconut

Method:

1. Bake the Vanilla Milk Cake as per the previous recipe.
2. In a saucepan, combine honey, sugar and water. Simmer until it forms a thin syrup.
3. Once the cake is out of the oven, pierce it with a skewer and generously pour the honey-sugar syrup over it.
4. Warm the Mixed Fruit Jam and spread it evenly over the cake.
5. Finally, coat the entire cake with a generous layer of dessicated coconut.
   

Notes:

• Allow the cake to absorb the honey syrup for a moist and flavourful result.
• Warming the jam makes it easier to spread and enhances its lusciousness.

• 40 grams of Butter

Method:

• Prepare the Batter: In a mixing bowl, combine eggs, sugar, oil, and homemade vanilla essence. Whisk with a mixer until the mixture becomes thick and pale.
• Sift: Sift the all-purpose flour, baking powder & salt together three times. Gradually incorporate the sifted flour into the egg, sugar, and oil batter, folding gently until thoroughly combined
• Butter-Milk Mixture: Meanwhile, pour milk into a saucepan and bring it to a gentle boil. Immediately, mix in the butter until it's a velvety liquid. Now, stir this magical concoction into your batter.
• Mix to Perfection: Combine everything together until the batter becomes a smooth. Your kitchen should be filled with the aroma of vanilla, promising a delightful treat.
• Into the Oven: Pour this mixture into a greased baking tin. Preheat your oven to 170 degrees Celsius and let the magic unfold. Bake for approximately 40 minutes, or until a skewer inserted in the centre comes out clean.
• Slice of Joy: Once baked to perfection, let your Vanilla Milk Cake cool for a bit. Then, slice into this moist, soft, and fluffy goodness.

    Oh, I can practically smell the aromatic goodness of Inji Puli already! It’s amazing how one dish can have so many delightful variations. From the simple comfort of the basic version to the rich complexity of the Varutharacha Inji Puli, and the heartwarming touch of this Palakkad Style—it’s like a journey through my own childhood with pages filled with flavours & memories.

The Perpetual Steel Dappa: A Legacy of my Amma's Love

    My mother’s Inji Puli holds a special space in my heart. Inji Puli is a permanent resident on our dining table: a small steel dappa (container) filled with this dark, oil glistening (longer shelf life) ginger curry. It was a default, perpetual item, every single morning, it was the side dish for my parents' kanji. In our home, Amma’s Sambar and Inji Puli had an "omnipresence"; she would make fresh batches the moment they began to dwindle, ensuring the jar was never empty.

    Life eventually drifted me toward new traditions. I remember my first Good Friday after marriage, standing in my in-laws' kitchen while my mother-in-law was in the hospital to bystand my sister law who was down with Typhoid. I was cooking the entire Sadhya alone for the first time! 

    You all might ask a Sadhya for Good Friday? Thats the tradition in our in-laws household. Once the cooking was done, I had called the "Great Clemmi Thathi" (my MIL’s mother) on an expensive STD line(in 90s) to ask about a blouse courier, but the conversation turned into a marathon cooking lesson. She taught me her Quick-Fix Inji Puli and Mathanga Erissery right there on the phone, a call that cost so much it was talked about for years!

    While I treasure that quick version and the rich Varutharacha Inji Puli my MIL later perfected, it is Amma’s Palakkad style that remains my soul food. Years later, when I was bedridden with a brutal combination of gastroenteritis and chicken pox, it was this very dish I craved. My loving daughter made it for me with such care and love, serving it with Paal Kanji to soothe my stomach and satiate my mind.

Ingredients for Palakkad Style Inji Puli

The Base Tempering:

• 1/2 cup Ginger (finely chopped)
• 4-5 Green Chillies (cut into rounds)
• 6-8 Shallots (finely chopped)
• A handful of Curry Leaves

The Spices & Seasoning:

• 1/2 tsp Turmeric Powder
• 1 tsp Red Chilli Powder (adjust to your heat preference)
• 2 tbsp Tamarind Paste (thick extract)
• 2 tbsp Jaggery (adjust based on tamarind tartness)
• Salt to taste
• Water as needed

Method - Detailed Cooking Instructions

Step 1 - The Tempering: 

• Heat 2 tablespoons of coconut oil in a pan. Splutter the mustard and fenugreek seeds. Add dry red chillies and asafoetida, letting them sizzle until fragrant. Let the flame be at low.

Step 4 - The Simmering: 

• Pour in enough water to create a thick consistency. Let it simmer on low heat as the jaggery combines well with the spices.

Pro Tip: Simmer until the oil separates and the mixture thickens into a dark, jammy consistency. This ensures the flavours meld perfectly.

Step 5 - Cooling: 

• Once thickened to your liking, turn off the heat. Let it cool completely before transferring to a glass jar.

• My personal Favourites: Pairs beautifully with Paal Kanji (Coconut milk rice porridge) or Curd Rice. So simply serve it with Kanji (Rice Porridge)
