    Ah, the infamous memories of being nudged into eating something for its alleged health benefits! That's exactly what comes to mind when I think of Vallarai Keerai (Indian Penny wort). My experience with this green was less than fond, and I suspect many of you can relate to these childhood recollections.  

    Introducing Pegaga - the Indian Penny wort, or Vallarai Keerai, as it's known in Tamil, is a green that’s woven into the fabric of many childhood memories, including my own. Back in the day, this leaf was almost a celebrity in local communities across India for its reputed health benefits, particularly its ability to boost memory power. My mother, ever the health enthusiast, believed fervently in its benefits. As a result, Vallarai Keerai featured prominently in our meals, often paired with green moong beans to soften its bitter notes. As a child, I wasn't a fan—mostly I’d just gulp it down to avoid the formidable gaze of my mum. While I can’t vouch scientifically for its memory-enhancing properties, it certainly quickened my pace at finishing meals—I was quite the slow eater back then!

Some variations of the recipe also incorporate the tangy sweetness of Pomelo, which adds an exciting twist. Ingredients:

Mango Sago Dessert Recipe:

• 2 Ripe Mangoes
• 1/2 cup Small Tapioca Pearls (sago)
• 500ml Coconut Milk
• 1/4 cup Condensed Milk (adjust to taste)
• 1/4 cup Sugar (adjust to taste)
• 1 cup Water

For Garnishing:

• Few Pieces of Cubed Mangoes
  
• Fresh mint leaves for garnish (optional)
• Rose Syrup (optional)
  

Method:

• Wash the Tapioca Pearls (Sago)thoroughly under running water until the water runs clear. Soak the tapioca pearls in water for about 30 minutes.
• While the Sago is soaking, peel and chop the ripe mangoes. Set aside a few mango chunks for garnish.
• In a pot, bring water to a boil, and then add the soaked tapioca pearls. Cook the tapioca pearls on medium heat for about 10–15 minutes or until they turn transparent, stirring occasionally to avoid sticking. Once cooked, drain the excess water and rinse the sago with cold water to prevent further cooking. Set aside.
• In a separate bowl, combine the coconut milk, condensed milk, and sugar. Adjust the sweetness according to your preference.
• Blend the majority of the chopped mangoes into a smooth puree. Keep a few mango chunks aside for garnishing.
• In a large mixing bowl, combine the mango puree, cooked tapioca pearls, and the coconut milk mixture. Mix everything well until fully combined.
• Chill the mango sago dessert in the refrigerator for at least 1 hour or until thoroughly chilled.
• Once chilled, serve the Mango Sago Dessert in individual bowls or glasses. Garnish each serving with the reserved mango chunks and fresh mint leaves for an extra touch of freshness.

• Choosing the Right Mangoes: For the best Mango Sago Dessert, opt for ripe and sweet mangoes. Varieties like Alfonso, Thai Water Lily/Gold Lily, or Honey Gold are excellent choices as they have a smooth texture and intense flavour. Avoid fibrous mangoes, as they may affect the smoothness of the puree.
• Soaking the Tapioca Pearls: Rinse the tapioca pearls thoroughly until the water runs clear before soaking them. This helps remove excess starch and prevents them from sticking together during cooking.
• Cooking the Tapioca Pearls: When boiling the soaked tapioca pearls, stir them occasionally to ensure even cooking. Overcooking can lead to a mushy texture, so keep an eye on them and drain immediately once they turn transparent.
• Adjusting the Sweetness: The sweetness of the dessert can be adjusted to suit your taste. If the mangoes are naturally very sweet, you may reduce the amount of sugar or condensed milk. Alternatively, if the mangoes are not as sweet, you can increase the sweetness slightly.
• Chilling the Dessert: For the most refreshing experience, let the Mango Sago Dessert chill in the refrigerator for at least an hour before serving. You may also add ice cubes to speed up the chilling process, but avoid adding them directly to the dessert to maintain the desired consistency.
• Pomelo Additions: If you decide to include Pomelo in the dessert, add it just before serving to preserve its vibrant taste and prevent any bitterness. Peel the Pomelo, remove the membranes, and separate the sacs before gently folding them into the dessert.

JACK FRUIT/CHAKKA APPAM - CHAKKA ADA

    Let's come up with a few recipes suitable for the Season - Summer, Summer Fruits, Summer Holidays.  Arrival of summer in India brings forth the Season of seasonal fruits like Jack Fruit and Mangoes.  When a produce is in abundance, an Indian household gets busy preserving it in its own way or utilizing it in the best possible way.  So, a few recipes with Jack Fruit for the Season.

    Should I Say this Palaharam as Chakka Appam or Chakka Ada?  Well, both seems to sound correct to my knowledge.  Chakka Appam or Chakka Ada is a classical Kerala Palaharam prepared with Rice flour, Jaggery and one main ingredient irresistibly a Keralites favourite - Chakka alias Jack Fruit.  It is a common joke of a Malayalee that, if Sir Isaac Newton was born in India, instead of an apple, a jackfruit might have hit his head.  If so, the irony would be that he wouldn't have lived to proclaim his Law of Gravity.  Well, so is the popularity of this amazingly big fruit in God's Own Country.  Least to mention the variety of dishes made out of this fruit.  Right from a young raw jackfruit to the ripe one, at different stages of its growth, even it seeds are converted into tasty dishes, there comes a dish made out of Jack fruit in Kerala.

JACK FRUIT

    My husband gets overwhelmed when purchasing his favourite items and especially items like Tapioca & Jack Fruit, his whims get to the core and buys portions more than what is necessary for two of us.   A few months back it happened again, and he ended up buying a big portion of Jack Fruit from the local wet market.  As usual, my mind got occupied with the thought of finishing it soon, in vain trying with the next step of preserving it.  In the process, as a helping hand, he came with the idea of making this Chakka Appam.  Well, I had actually made a portion of Chakka Varattiyathu in the morning, and so I felt the idea of cooking up Chakka Appam is going to be an easy task and so was it.

    So, well talking about Chakka Appam or Chakka Ada, it is one Kerala Palaharam similar to Ela Ada/Ilayada.  Ela Ada is made with Rice Flour with a filling inside, which is usually made of Coconut & Jaggery.  But the main difference in this recipe is that the filling has Jack Fruit Purée or simply the Chakka Varattiyathu or the Jack Fruit Preserve.  Some recipe of this Chakka Appam/Ada is made with an outer layer of Rice Flour and the filling inside.  Whereas, some recipes are made by kneading all the ingredients together along with the Rice flour and this recipe is done in the above method.  I have kneaded all the ingredients together and then, just spread it out over a Banana Leaf.  Gently press the folded Banana Leaf & tightly secure it.  Steam cook this simple delicacy in a steamer until cooked.

INGREDIENTS:

With Jack Fruit Purée:

METHOD:  

CHAKKA APPAM DOUGH

For Chakka Appam Dough:

• Grind the Jack Fruits and make a Purée out of it.
• Add powdered jaggery to the Jack Fruit Purée and mix well.
• Mix well until the Jaggery dissolves.
• Alternatively, can add powdered Jaggery while grinding the Jack Fruit pods.
• Then, add the roasted Rice Flour, grated Coconut, Powdered Cardamom, Dry Ginger Powder and mix well until well combined.
• Finally, add a teaspoon of melted Ghee and mix well.
• The dough would be slightly loose and pliable.
• You may not need any extra water while mixing the dough in this method
  

JACK FRUIT/CHAKKA APPAM - CHAKKA ADA

INGREDIENTS:

With Chakka Varattiyathu/Jack Fruit Preserve:

Rice Flour - 1 Cup
Chakka Varattiyathu /Jack Fruit Preserve - 3/4 Cup
Jaggery - 1/4 Cup
Water - 1/4 Cup
Grated Coconut - 1/2 Cup
Cardamom Powder - 1/2 Teaspoon 
Dry Ginger Powder - 1/4 Teaspoon 
Ghee - 1 Teaspoon
Salt - a Pinch

JACK FRUIT/CHAKKA APPAM - CHAKKA ADA

METHOD:  

For Chakka Appam Dough:

• Melt the Jaggery in 1/4 Cup of Water.
• The idea is to just dissolve the Jaggery here.
• Strain for any impurities and transfer it into a pan.
• Add 3/4 Cup Chakka Varattiyathu to the Jaggery water and mix it thoroughly until well combined.
• Cook this on a low flame until it boils.
• Then, add the roasted Rice Flour, grated Coconut, Powdered Cardamom, Dry Ginger Powder and mix well until well combined.
• Finally, add a teaspoon of melted Ghee and mix well.
• The dough would be slightly loose and pliable.

Folding Chakka Appam in a Banana Leaf:

JACK FRUIT/CHAKKA APPAM - CHAKKA ADA

• Cut Banana Leaves and smear Coconut Oil over it.
• Spoon in a handful of Chakka Appam Dough on to the Banana Leaf.

• Fold the Banana Leaf into two and gently press it with your palms so that the dough evenly spreads through the Banana Leaf.
• Press the Banana Leaves & tightly secured the dough inside the Leaf and leave it aside.

JACK FRUIT/CHAKKA APPAM - CHAKKA ADA

• Follow the suit for the rest of the dough.
• Smear a little bit of coconut oil over the tray/plate which would be used to steam the Chakka Appam/Ada, alternatively, you can line up a Banana Leaf over the tray.
• Arrange the prepared Chakka Appam/Adas in the tray/plate. Do not overcrowd the Chakka Appam.

Steam Cooking the Chakka Appam/ Ada:

• Pour water into the Idli Chembu/Steamer, cover and allow it to boil for about 10–12 minutes on a medium flame.
• Once the steam builds, then place the tray/plate with the prepared Chakka Appam/Ada into the steamer.

JACK FRUIT/CHAKKA APPAM - CHAKKA ADA

•  Cover the lid tightly and Steam cook the Ela Adas on a low flame for about 10–15 minutes, or until they are no more sticky.

CHAKKA APPAM

• Switch off the flame.
• Serve Ela Ada/Ilayada hot or at room temperature.

NOTES:

• Can use ready-made Appam/Idiyappam/Pathiri Flour for the recipe. I have used Malaysian Brand, Babas Idiyappam Flour for the recipe.
• The dough should be slightly loose and pliable. Adjust accordingly. 
• Adding ghee to the dough is purely optional. But it gives a wonderful texture and aroma to Chakka Appam.
  
• Adjust the amount of jaggery to suit your taste preference.
• Using Dry Ginger Powder is Optional.

HOW TO MAKE ROSE SYRUP

    The idea of making Rose Syrup got into my mind when I ended up buying bottles of Rose Syrup with no added sugar in it.  It was just the Rose Essence, a thick concoction of Rose Essence in a bright Pink colour.  But to my dismay, none had Sugar in it. I bought them to make Rose Milk, a.k.a. Bandung(in Malay). So, while I wanted to use it for Falooda I needed it as a thick sweet syrup which could be used to smear it around the glass.  So that's when I converted the Rose Essence into Rose Syrup.

    Elegantly redolent, colourful Roses with its exotic fragrance has always appealed me to the core. Roses have always been one favourite flower.  After all, "A Rose is a Rose is a Rose... "- as said by Shakespeare and one of my husband's favourite quotes... I love rose flavoured dishes and drinks and I have one person who's my kin with my liking and that is my son.  He loves Rose Milk, Gulab Jamun, Falooda, a small hint of Rose and I guess he likes it.

    Well, Rose Syrup is something which is made with fresh Rose Petals, or that's what they proclaim to be so.  But store bought ones are mostly Rose flavoured Syrups with artificial rose essences and food colouring.  Even I am not going to talk about making all good organic Rose Syrup here.  The issue is I do not get that many Roses here, the variety(I think it is the Shrub Rose Variety), which suits best to make Rose Syrup.  But this recipe is made with dried rose petals. But my first attempt went with making Rose Syrup with Rose Essence (which had Food colouring too).  

HOW TO MAKE ROSE SYRUP

    Some recipes are so that we never attempt to make them at home, and I feel Rose syrup comes under that category.  Maybe the idea of making this might sound tedious and time-consuming for a few, but it is one easy recipe. Water, sugar, and dried rose petals are all you need to easily make this floral rose syrup at home.  Boil Sugar & Water along with fresh/dried rose petals until it reaches one string consistency or becomes slightly thick & sticky all together. Finally, add rose water or rose essence, strain it and there you go with a Rose syrup, ready to add beauty, taste and aroma to the dishes.

    This easy and extremely versatile Rose Syrup is sure to elevate your desserts, drinks, cocktails, and mocktails. This Rose Syrup can be added to almost anything in which you would love to have a note of rose and a tinge of pretty pink colour. It will leave you with an elegantly sweet, dainty and exotic aromatic floral note.  You could indulge into a Rosy fragrant aroma so, calming and sensuous.

    This rose syrup has equal parts of water and sugar, dried rose petals and some rose flavourings. Plenty of dried rose petals are used in this rose syrup recipe.  And a few other ingredients which are optional like Kewra Water, Rose Food colouring etc., for added flavour and colour can be added to this Rose Syrup, but I personally do not add them.

This is Rose Syrup and what you would need is, Rose Petals 

Rose Petals - Fresh or dried ones suit well to be used to make this Rose Syrup.  Shrub variety Roses which are unique for its fragrance is my personal choice.  Can also use Red/Pink Hybrid variety Roses.  Why Red or Pink Roses?  They naturally yield you with a Pink hued Rose Syrup.

ROSE PETALS

• Fresh Petals - Buy food grade Rose Petals.  If you can get hold of fresh roses from your garden which are pesticide free, well, and you are good to go.
• Dried Petals/Buds - Get food-grade rose petals. Never use dried rose petals from a flower shop, since those are loaded with chemicals. While using rose buds, make sure to cut them into two, which would infuse the aroma well into the Rose Syrup.
  
• Artificial Rose Essence - If you do not have Rose Petals, then you are easy to go with Rose Water/Rose Essence and a few drops of Pink Food Colouring.  The pink food colouring can be substituted with a few pieces of Beetroot, which would naturally dye the syrup Pink. 

Then what you need is Sugar:

White Sugar - I have used white sugar in this recipe, which will help you to retain the natural pink colour unique to Rose Syrup. Add a dash of lime juice to avoid crystallization.

INGREDIENTS: 

For Rose Syrup:

Optional Ingredients:

METHOD:

• If using fresh rose petals, rinse well and leave it in a colander for a few minutes.
• While using dried Rose Petals, rinse them well & then soak it in warm water for about an hour.
• If there are any small Rose buds, cut them into two or four so that the rose flavour gets well infused into the Rose Syrup.
• In a Saucepan, pour in the water and add sugar into it.
• Stir well to combine, and boil it over a medium-high heat until the sugar is dissolved completely.
• Now, add the Fresh/dried Rose petals and give a quick stir.
• Let it boil for about 5 minutes.
• Then add Beetroot pieces and mix well.
• Boil this over a low flame for about 30 minutes.
• Pour in the Lemon Juice and cook for about 5 more minutes.
• Finally, add Rose Water/Rose Essence and mix well.
• Boil the Syrup until it reaches one string consistency.
• Switch off the flame and allow it to cool down for a few minutes.
• When the mixture is warm, strain the syrup. 
• Discard the beetroot pieces from the Syrup.
• Remove the Rose Petals and store them in an airtight container in the refrigerator. 
• Once the Rose Syrup cools down completely, store it in a sterilized glass jar or bottle.
• Rose syrup stays fresh for up to 6 months when stored in a dark, cool place. 
• For a longer shelf life, store the Rose Syrup in the refrigerator. 

NOTES:

• I have used white sugar in this rose syrup recipe. Brown sugar may darken the Rose Syrup, but if you prefer, substitute Brown Sugar with White Sugar.
• If you are buying the Rose Petals, make sure to buy food grade petals.  Roses from a florist might be loaded with chemical & pesticides. 
• Red or Pink roses are the best for making Rose Syrup and would yield you with a desired pink colour naturally.
• I have made this Rose Syrup with dried rose petals, which gave a natural fragrance and a mild colour.
• The colour of the rose syrup will depend on the quality and the colour of the rose petals. So, I added Beetroot and a teaspoon of Rose Essence, as we love vibrant coloured Rose Milk.
• Discard the beetroot pieces from the Syrup.
• Remove the Rose Petals and store them in an airtight container in the refrigerator.
  
• Can use the Rose Petals while making Kulfi or Meeta Paan (instead of Gulkand).  Can use it as a garnish in desserts like Rabdi, Shahi Tukda, Ice creams, drinks etc.,
  
• For a vibrant pink coloured Rose Syrup can use pink food colour.
  
• An Indian brand of Rose Syrup called Rooh Afzah has Kewra Essence in it.  If you prefer the flavouring can add Kewra Water/Essence while making Rose Syrup.
• Adding Lemon juice while making the syrup is to prevent it from crystallization, and it also acts as a preservative. 
• Boil the Syrup until it reaches one string consistency.
• The Syrup gets slightly thicker after cooling down.
• Store Rose Syrup in the refrigerator. This will increase the Shelf life of the Syrup.
• I have added no preservatives or artificial colouring in this Homemade Rose Syrup.

Rose syrup is such a versatile concoction, you can use it in many ways. Here are some simple and easy uses of Homemade Rose Syrup:

• For Rose Sharbath/Syrup Bandung - Add this rose syrup to plain water & top it up with some Ice cubes.  For a variation, can mix it in Soda.  Or add a dash of Lime/Lemon and serve it with a few leaves of Mint.

  Ab Haveej Bastani

• Add this to Milk to make Rose Milk/Bandung. Serve topped with ice cubes.
• Use this Rose Syrup to make a Rose Flavoured Milk Shake. 
• You can use this Rose Syrup while making Philippino Samalamig Buko Salad, a drink made with tender coconut water, milk, Rose Syrup, jellies, tapioca pearls and served with tender coconut shavings.
• Drizzle a few teaspoons of Rose Syrup while making Ab Haveej Bastani instead of Rose Water/Essence to convert the Persian Carrot Juice served with Saffron Ice cream into a vibrant drink. 
  
• Make a simple tea and add a hint of this Rose Syrup for Rose Tea.
• Add rose syrup, crushed strawberries, and water to a glass. Mix well. Your beautifully vibrant, sweet, and tart floral-fruity drink is ready.
• Add a teaspoon of Rose Syrup into your limeade or lemonade, for a rose flavoured Lime/Lemon drink.
•  Or add it to your Cocktails, Mocktails, Mimosas, rosé wine, or sparkling drinks.  
• Drizzle rose syrup over your cakes, crêpes, waffles, or pancakes.

• Shahi Gulab Kulfi

• Can use this Rose Syrup while making Falooda and Kulfi Falooda. 
• Add this Rose Syrup to Kulfi for a Rose flavoured Shahi Gulab Kulfi. 
• Can make rose ice cream using this Rose Syrup.
  
• Drizzle rose syrup over ice-creams or desserts.

• Add a few teaspoons of Rose Syrup while making Phirni/Firni for Rose Phirni.
• Add it to your Curd/yogurt to make flavoured sweet yogurt or cooling Rose Lassi.
• Can use this Rose Syrup while making Kuih Sago Rose, a Malaysian kuih prepared with Tapioca Pearls.
  
• Make Rose Rabdi using this syrup for an excellent dessert.
  
• This homemade rose syrup can also be added to while making Rasagulla and Gulab Jamuns.
