ROSE SYRUP
HOW TO MAKE ROSE SYRUP

The idea of making Rose Syrup got into my mind when I ended up buying bottles of Rose Syrup with no added sugar in it.  It was just the Rose Essence, a thick concoction of Rose Essence in a bright Pink colour.  But to my dismay, none had Sugar in it. I bought them to make Rose Milk, a.k.a. Bandung(in Malay). So, while I wanted to use it for Falooda I needed it as a thick sweet syrup which could be used to smear it around the glass.  So that's when I converted the Rose Essence into Rose Syrup.

Elegantly redolent, colourful Roses with its exotic fragrance has always appealed me to the core. Roses have always been one favourite flower.  After all, "A Rose is a Rose is a Rose... "- as said by Shakespeare and one of my husband's favourite quotes... I love rose flavoured dishes and drinks and I have one person who's my kin with my liking and that is my son.  He loves Rose Milk, Gulab Jamun, Falooda, a small hint of Rose and I guess he likes it.

Well, Rose Syrup is something which is made with fresh Rose Petals, or that's what they proclaim to be so.  But store bought ones are mostly Rose flavoured Syrups with artificial rose essences and food colouring.  Even I am not going to talk about making all good organic Rose Syrup here.  The issue is I do not get that many Roses here, the variety(I think it is the Shrub Rose Variety), which suits best to make Rose Syrup.  But this recipe is made with dried rose petals. But my first attempt went with making Rose Syrup with Rose Essence (which had Food colouring too).

ROSE SYRUP
HOW TO MAKE ROSE SYRUP

Some recipes are so that we never attempt to make them at home, and I feel Rose syrup comes under that category.  Maybe the idea of making this might sound tedious and time-consuming for a few, but it is one easy recipe. Water, sugar, and dried rose petals are all you need to easily make this floral rose syrup at home.  Boil Sugar & Water along with fresh/dried rose petals until it reaches one string consistency or becomes slightly thick & sticky all together. Finally, add rose water or rose essence, strain it and there you go with a Rose syrup, ready to add beauty, taste and aroma to the dishes.

This easy and extremely versatile Rose Syrup is sure to elevate your desserts, drinks, cocktails, and mocktails. This Rose Syrup can be added to almost anything in which you would love to have a note of rose and a tinge of pretty pink colour. It will leave you with an elegantly sweet, dainty and exotic aromatic floral note.  You could indulge into a Rosy fragrant aroma so, calming and sensuous.

This rose syrup has equal parts of water and sugar, dried rose petals and some rose flavourings. Plenty of dried rose petals are used in this rose syrup recipe.  And a few other ingredients which are optional like Kewra Water, Rose Food colouring etc., for added flavour and colour can be added to this Rose Syrup, but I personally do not add them.

This is Rose Syrup and what you would need is, Rose Petals

Rose Petals - Fresh or dried ones suit well to be used to make this Rose Syrup.  Shrub variety Roses which are unique for its fragrance is my personal choice.  Can also use Red/Pink Hybrid variety Roses.  Why Red or Pink Roses?  They naturally yield you with a Pink hued Rose Syrup.

ROSE SYRUP
ROSE PETALS

  • Fresh Petals - Buy food grade Rose Petals.  If you can get hold of fresh roses from your garden which are pesticide free, well, and you are good to go.
  • Dried Petals/Buds - Get food-grade rose petals. Never use dried rose petals from a flower shop, since those are loaded with chemicals. While using rose buds, make sure to cut them into two, which would infuse the aroma well into the Rose Syrup.
  • Artificial Rose Essence - If you do not have Rose Petals, then you are easy to go with Rose Water/Rose Essence and a few drops of Pink Food Colouring.  The pink food colouring can be substituted with a few pieces of Beetroot, which would naturally dye the syrup Pink.

Then what you need is Sugar:

White Sugar - I have used white sugar in this recipe, which will help you to retain the natural pink colour unique to Rose Syrup. Add a dash of lime juice to avoid crystallization.

  • If using fresh rose petals, rinse well and leave it in a colander for a few minutes.

  • Now, add the Fresh/dried Rose petals and give a quick stir.

  • ROSE SYRUP

NOTES:

  • I have used white sugar in this rose syrup recipe. Brown sugar may darken the Rose Syrup, but if you prefer, substitute Brown Sugar with White Sugar.
  • If you are buying the Rose Petals, make sure to buy food grade petals.  Roses from a florist might be loaded with chemical & pesticides.
  • Red or Pink roses are the best for making Rose Syrup and would yield you with a desired pink colour naturally.
  • I have made this Rose Syrup with dried rose petals, which gave a natural fragrance and a mild colour.
  • The colour of the rose syrup will depend on the quality and the colour of the rose petals. So, I added Beetroot and a teaspoon of Rose Essence, as we love vibrant coloured Rose Milk.
  • Discard the beetroot pieces from the Syrup.
  • Remove the Rose Petals and store them in an airtight container in the refrigerator.
  • Can use the Rose Petals while making Kulfi or Meeta Paan (instead of Gulkand).  Can use it as a garnish in desserts like Rabdi, Shahi Tukda, Ice creams, drinks etc.,
  • For a vibrant pink coloured Rose Syrup can use pink food colour.
  • An Indian brand of Rose Syrup called Rooh Afzah has Kewra Essence in it.  If you prefer the flavouring can add Kewra Water/Essence while making Rose Syrup.
  • Adding Lemon juice while making the syrup is to prevent it from crystallization, and it also acts as a preservative.
  • Boil the Syrup until it reaches one string consistency.
  • The Syrup gets slightly thicker after cooling down.
  • Store Rose Syrup in the refrigerator. This will increase the Shelf life of the Syrup.
  • I have added no preservatives or artificial colouring in this Homemade Rose Syrup.

How to make Carrot Mysore Pak: A Step-by-Step Guide

Making Mysore Pak, especially Carrot Mysore Pak, has turned into a delightful journey in my kitchen. With my daughter a.k.a Strict Appicer!—my toughest critic—keeping a watchful eye, I’ve perfected each step, adding a unique twist with the luscious Carrot Purée. If you love the melt-in-the-mouth Mysore Pak from Krishna Sweets, this recipe is crafted just for you. Follow these detailed instructions to achieve the perfect results.

Essential Tips Before You Start

Before diving into the preparation of this delectable treat, keep these important points in mind:

  • Prepare Your Ingredients: Measure all the ingredients and keep them ready. Having everything prepped will make the cooking process smoother and more enjoyable.  Purée the Carrot and grind it with very little water into a very smooth paste.
  • Melt the Ghee: Melt the ghee (clarified butter) and measure it afterward for accurate proportions. This helps ensure the right texture and flavour.
  • Roast the Gram Flour (Besan): Dry roast the gram flour on a very low flame until it’s fragrant. Be vigilant; burning or undercooking the flour can ruin the overall flavour of your Mysore Pak.
  • Cool the Flour: Allow the roasted gram flour to cool completely before mixing it with oil. This step is crucial for achieving the right consistency.
  • Preparing the Carrot-Enhanced Sugar Syrup: Mix the carrot purée with the sugar and water to create a vibrant sugar syrup that not only sweetens the Mysore Pak but also infuses it with the natural colour and subtle flavour of carrots.
  • One-String Sugar Syrup: Make sure the sugar syrup reaches one-string consistency. This is vital for the perfect texture of the Mysore Pak.
  • Continuous Stirring: Stir and scrape down the sides and bottom of the pan continuously throughout the process. This prevents the mixture from sticking and burning.
  • Stay Attentive: Don’t leave the mixture unattended while cooking. Staying focused will prevent any mishaps and ensure your recipe turns out perfectly.
  • Gradual Addition of Ghee/Oil: Pour the Mysore Pak batter gradually into the sugar syrup while cooking on a medium-low flame. This ensures proper mixing and absorption.
  • Batching the Ghee/Oil: When adding the first batch of oil/ghee, do so in small increments (about 20 ml at a time). Wait until each addition is well absorbed before adding more. This step is done on a medium-low flame. This method enhances the texture of the final product.
  • Next batch of Oil/Ghee: The next round of Ghee/Oil is poured, off the heat.
  • Prepare Your Pan: Grease a rectangular pan with oil and line it with parchment paper. This will help you remove the Mysore Paks easily once they set.

"Irresistible Carrot Mysore Pak Recipe: A Melt-in-the-Mouth Festive Delight"

Mouthwatering Carrot Mysore Pak: A Sweet Indulgence

Ingredients

For Mysore Pak Batter:

  • 100 grams Bengal Gram Dhal Flour (Besan)
  • 100 ml Oil

For Sugar Syrup:

  • 300 grams Sugar
  • 120 grams  Carrot Purée
  • 100 ml Water

For Carrot Mysore Pak:

Over the Heat:
  • 100 ml Oil
Off the Heat:
  • 50 ml Oil
  • 50 ml Ghee

Method

Step 1: Prepare the Mysore Pak Batter

  • Dry Roast the Gram Flour: Heat a pan over a low flame and dry roast the Bengal Gram Flour (Besan) until it becomes fragrant. Take care not to burn the flour as this can spoil the flavour.
  • Cool and Sift: Once roasted, switch off the flame and allow it to cool completely. Sift the flour to remove any lumps. This step is crucial for achieving a smooth batter.
  • Mix with Oil: After cooling, pour in 100 ml of oil and whisk well until the mixture is lump-free.  Set the batter aside.

Pro Tip: You can also sieve it again to ensure the batter is lump-free and has a smooth texture.

Step 2: Prepare the Sugar Syrup with Carrot Purée

  • Clean, Peel, and Grate the Carrots: Start by thoroughly cleaning and peeling the carrots, then grate them finely.
  • Make a Smooth Purée: Grind the grated carrots into a smooth purée without adding any water. If the mixture is too thick, add 2-3 teaspoons of water to help achieve the right consistency.
  • Combine Sugar, Water, and Carrot Purée: In a heavy-bottomed non-stick pan, add 300 grams of sugar, 100 ml of water, and the carrot purée. Mix everything well.
  • Dissolve the Sugar: Heat the mixture on a low flame, stirring continuously until the sugar has completely dissolved.
  • Boil to One String Consistency: Once the sugar has dissolved, stop stirring and let the mixture come to a boil over medium-high heat. Achieve one string consistency, which is crucial for making perfect Carrot Mysore Pak.

Note: Overheating the syrup will caramelize it, leading to hard Mysore Pak.      *Pro Tip:  To check for one string consistency, take a spoonful of syrup and let it drizzle; it should form a thin string without breaking.

Melt-in-mouth Carrot Mysore Pak

Step 3: Combine Batter and Sugar Syrup

  • Incorporate the Batter: As soon as the Carrot Purée Syrup reaches one string consistency, gradually pour in the Mysore Pak batter while stirring continuously. This prevents lumps from forming.
  • Cook the Mixture: Keep stirring to ensure the batter doesn’t stick to the sides or bottom of the pan. Cook on medium-low heat until large bubbles form, indicating its thickening.
  • Add Oil in Batches: Slowly incorporate 100 ml of oil in small batches (about 20 ml at a time). Wait for each batch to be absorbed before adding more (the next 20ml batch). Stir continuously throughout this process.

Note: For 100 ml oil you may have to pour it in 5 batches totally - 20 ml each.

Step 4: Final Touches

  • Incorporate Remaining Oil and Ghee: Once all the oil is absorbed and the mixture looks foamy, turn off the heat. Add 50 ml of ghee and 50 ml of oil gradually, stirring well until fully incorporated. The batter should resemble a dough that slightly pulls away from the pan.

Note: Pour the last batch of 50ml Ghee & 50ml Oil gradually in batches after switching off the flame.

  • Set the Carrot Mysore Pak: Grease a rectangular pan and optionally line it with oiled parchment paper for easy removal. Pour the mixture into the pan and level the top. After about 5 minutes, draw rectangular lines with a knife to mark the pieces.
  • Cool and Serve: Let the Carrot Mysore Pak cool for about 40–45 minutes. Once set, gently invert the pan onto a plate or remove the parchment paper. Enjoy a piece or two immediately!

Serving Suggestions:

  • Storage: Store the Carrot Mysore Pak in an airtight container lined with parchment paper. When kept properly, it can last 5–7 days at room temperature or longer in the refrigerator.

Pro Tip: Microwave for a few seconds before serving for that fresh taste.

Notes & Tips for Perfecting Your Carrot Mysore Pak Recipe

Creating the perfect Carrot Mysore Pak involves attention to detail and a few key tips. Here’s what you need to keep in mind for a delightful experience:

Key Tips for a Flawless Recipe

  • Roast the Gram Flour: Dry roasting the Bengal gram flour (besan) until it’s fragrant is essential. This step enhances the flavour of your Mysore Pak, giving it that deliciously nutty aroma.
  • Fresh Carrot Purée - Use freshly made carrot purée for the best flavour and colour.
  • Avoid using food colouring. The natural orange hue from the carrots adds an authentic touch.
  • Mastering Sugar Syrup: The sugar syrup must reach one-string consistency. To test this, take a spoonful of syrup and pour it back. If it forms a thin string without breaking, you’re good to go! This consistency is vital for achieving the perfect texture in your Mysore Pak.
  • Oil and Ghee Proportions: In this recipe, I’ve used 150 ml of oil and 50 ml of ghee. This combination creates a melt-in-mouth texture reminiscent of the Mysore Pak sold in traditional Indian sweet shops. Trust me; this is the way to go!

Adjusting for Ghee Lovers

  • All Ghee & No Oil: If you’re a fan of that rich ghee flavour, feel free to substitute all the oil with 200 ml of ghee. Just ensure it’s melted and slightly warm when you add it to the batter. However, for health reasons, I advise against using only ghee, as moderation is key.

Setting Your Carrot Mysore Pak

  • After pouring in the batter, let it rest for about 40–45 minutes to set. If you’re too eager to indulge, you can dig in after just 10–15 minutes!

Your Sweet Journey Awaits with Carrot Mysore Pak!

And there you have it—the ultimate Carrot Mysore Pak recipe that adds a vibrant twist to the classic favourite. A Break from Blogging and a Journey to Southern Italy

Life has been a whirlwind lately, keeping me away from my blog. Amid personal commitments and a trip halfway across the globe, I found myself immersed in the picturesque southern region of Italy. Between planning and travelling with my daughter, my mind was constantly pulled in different directions. We spent days exploring the historical and cultural gems of Italy—mountains, beaches, and centuries-old architecture. Of course, there was the inevitable rant about missing good old rice and curry under the scorching Sicilian sun. But that’s the beauty of travel—it broadens your horizons and opens your heart to new experiences and cultures.

Discovering the Sweet Essence of an Italian Breakfast

While the thrill of travel keeps me on my toes, let’s be honest: food steals the show. A typical Italian breakfast, or Colazione, introduced me to a world of sweetness—Cornettos (Croissants), Brioche, buns dripping with jam, and the iconic Sicilian Gelato served in a brioche bun. The delights didn’t end there. Sicily surprised me with its unique sweet treats like Cannoli, Sicilian almond cookies (pasticcini di mandorla), and the rich Cassata Siciliana. For someone used to savoury breakfasts, this was a sugar rush of epic proportions. Yet, the one constant was the coffee—whether it was a foamy cappuccino, creamy caffé latte, or the locals’ favourite, a strong shot of espresso (Café in their terms & Decoction in our terms).

Craving Familiar Comforts after Italian Indulgence

Despite the Italian feast of pizzas, pastas, focaccias, and arancinis—capped off with a decadent slice of tiramisu—nothing beats the comfort of home-cooked meals. After soaking in the Sicilian summer, I found myself yearning for something simple, like Thayir Sadham (curd rice) and pickle. Returning home, there was nothing more satisfying than this meal to recover from the trip. Once settled, I turned to my favourite breakfast—a classic toast with sunny-side up eggs and a robust cup of coffee—to soothe my soul and set the stage for getting back into my blogging routine.

Toasting Techniques: Find Your Perfect Method

When it comes to toasting bread, everyone has their preferred method to achieve that perfect crisp. Whether you choose a classic electric toaster or a convenient toaster oven, the goal is the same: golden-brown perfection.

The Art of Toasting Bread

Toasting bread is a cherished culinary tradition that dates back to Ancient Egypt, where it was discovered as a way to rejuvenate stale bread. Today, bread toast remains one of the most versatile and delicious options for breakfast or as a side dish for any meal.

Versatile Toasting Methods

The beauty of toast lies in its adaptability. You can create a delightful slice from virtually any type of bread, using a variety of methods. Whether you prefer a classic toaster, a conventional oven, an open flame, or a frying pan, there’s no shortage of ways to achieve that perfect golden-brown finish. Plus, the options for toppings are limitless, allowing you to tailor each slice to your taste preferences.

Toasting the Bread: A Timeless Tradition

Choosing the Right Bread

When it comes to selecting bread for toasting, there are plenty of options. White, wheat, rye, and multi-grain breads all work beautifully. Personally, I adore the traditional soft sandwich bread, which is always pre-sliced, ensuring a uniform toast that's ideal for making crunchy sandwiches or pairing with breakfast dishes.

Revitalise Stale Bread

Have some stale bread lying around? Don’t toss it out! Toasting stale bread can bring it back to life, enhancing its flavour and texture. This revitalising technique is why toasting has stood the test of time!

Enhance Your Breakfast Experience

To elevate your breakfast, consider adding fresh herbs or a sprinkle of your favourite seasoning to the eggs for an extra kick. This simple combo can be easily adapted to suit your taste buds, making it a versatile choice for any meal of the day.

Key Factors for Toasting Bread

When it comes to achieving the perfect toast, two crucial factors come into play:

  • Time &
  • Heat.

Finding Your Ideal Browning Level

The longer you toast your bread, the darker and crispier it will become. To achieve your desired level of browning, it's essential to adjust both the heat and the cooking time. Whether you prefer a light golden hue or a deep, rich brown, fine-tuning these elements is key.

The Family Method: Pan Toasting

Personally, I've cherished the traditional method I grew up with—my mum would toast bread on our trusty old chapati griddle or a Pan. This method allows for a simple, butter-free toast that beautifully enhances the bread's natural flavour.  This age-old method has been a staple in our kitchen for generations. Simply place your bread in a dry pan and let the heat work its magic.   For added richness, I recommend a light smear of butter. However, you can achieve excellent results even without butter or oil.

A Desi Twist: Toasting with Ghee - For a unique twist, I sometimes elevate my toast game by using ghee—a traditional Indian clarified butter. This adds a delicious depth of flavour that complements the toast perfectly.

* Trivia: What is Texas Toast?

Did you know that frying toast with a bit of butter or oil is often referred to as "Texas Toast"? This method not only creates a crisp texture but also results in a golden crust that’s irresistibly delicious.

Perfect Toasted Bread Recipe: A Simple Guide

Ingredients for Delicious Toast

To make the perfect toasted bread, you will need the following ingredients:

  • Bread (Brown or White): 2 slices
  • Butter: 1 tablespoon

Method: How to Toast Bread to Perfection

  • Prepare Your Pan - Start by heating a pan over medium heat. Once the pan is warmed up, reduce the flame to low-medium to ensure gentle toasting.
  • Butter the Bread - Using a butter knife or a flat spoon, smear some butter on each side of the bread slices. This step is essential for achieving a rich, golden crust.
  • Toast the Bread - Carefully place one or two slices of bread onto the pan. It's important to toast the bread over low heat to prevent excessive browning or charring, ensuring a perfect texture.
  • Flip and Finish - After a few minutes, flip the bread slices to toast the other side. Continue to toast until both sides are browned to your liking.
  • Serve and Enjoy - Once your bread slices are perfectly toasted, remove them from the pan. Repeat the process with any remaining slices.

Mastering the Art of Sunny-Side Up Eggs

Let’s dive into the star of the breakfast table—Sunny-Side Up Eggs! These eggs are not just delicious; they also serve as the perfect complement to your toasted bread. However, achieving that ideal sunny-side up egg requires careful attention to heat and technique.

1) Heat Control - Proper heat control is essential when cooking sunny-side up eggs:

  • Too Much Heat: If the pan is too hot, the egg whites will toughen and develop brown edges, ruining the delicate texture.
  • Too Low Heat: Conversely, cooking on too low a heat can lead to yolks that cook partway through before the whites are fully set.

To achieve perfection, start with the right heat setting—medium-low is ideal.

2) Oil is a crucial ingredient for sunny-side up eggs. A little bit of oil is essential as it helps to set the whites without covering the pan, ensuring that the yolks remain visible and perfectly runny. The hot oil creates a barrier that prevents the whites from spreading too thin while allowing them to cook evenly.

3) Seasoning - Season after the eggs are done.  Seasoning, a Sunny-Side Up Egg is always with Salt & Pepper.  I usually just sprinkle a dash of Salt.

  • Crack the Egg - Gently crack the egg into the pan.
  • Cook to Perfection - Cook for about three minutes, until the whites are mostly set, leaving a bit of runny white near the yolk.

Helpful Cooking Tips & Notes:

  • When cracking the egg, aim for a gentle action—there should be no hissing sound.
  • Ensure the egg lies flat and still in the pan; if you hear sizzling or see the whites fluttering, reduce the heat immediately. Too much heat will toughen the whites, leading to an undesirable texture.
  • Remember to season the eggs after they are done cooking to avoid drawing out moisture.
