'Tis the season, bringing beauty, colour, emotion, taste, and flavour. When I think about Christmas, the season reminds me of winter—cold and white. But I have never lived in a place where it snows. The misty cold winters of my hometown, Coimbatore, are a cherished memory I miss the most. Now, living in Malaysia’s tropical climate, Christmas comes with rain, as December is a particularly rainy month here.

The season is brightly coloured in hues of red and green, decorations lighting up dark nights, and filled with the flavours of wine and fruits. The aroma wafting from freshly baked goodies and the melodious chorus of carols proclaim the arrival of Christmas, putting me in a festive mood. However, this year feels different with both my kids travelling and not at home for the season.

My Personal Tradition: Embracing Christmas Baking:

As the countdown to Christmas begins, my daily routine is packed with seasonal duties: soaking dry fruits for the cake, cleaning the house, setting up the Christmas tree and nativity scene, baking the fruit cake, and planning the Christmas party menu. Despite feeling blue this year, I've managed to do most things, albeit with some procrastination.

When it comes to Christmas and Christmas fruit cake, I always think of local bakers soaking dry fruits in liquor for the season. It never occurred to me that I would do the same for my homemade Christmas cake. As a daughter-in-law, I have embraced the family tradition of making Christmas cake, passed down from my mother-in-law.

After trying various alcohols, I've stuck to using my homemade wines, as I love making everything from scratch. I even make my own dry fruits, from tutti frutti with raw papayas and pears to candied peels and candied ginger. The only fruits I buy are raisins, dates, cranberries, and cherries.

Long-Term vs Short-Term Soaking: Which is Best?

I usually keep a big batch of soaked fruits in my refrigerator for up to a year. Sometimes, a batch from the previous year remains intact, which I use in my Christmas cakes. Just drizzle a bit of alcohol from time to time to prevent them from drying up or spoiling. Proper storage ensures a longer shelf life.

If you’re short on time, don’t worry. You can soak the dry fruits just a day before preparing the Christmas fruit cake. There are no strict rules on the type of dry fruits, nuts, spices, soaker, soaking duration, or preparation method. It’s all about your preferences and timing. What we need is a good Christmas fruit cake that tastes and feels good for the season.

*You can also use dry fruits like figs, peaches, apricots, pineapple, currants, and candied ginger in the fruit cake.

Nutmeg - 1/4 teaspoon
Cinnamon - 1/4 teaspoon

Notes on Ingredients:

Ensure you use cleaned and dried, dry fruits.
Wash them thoroughly and dry them before soaking.
Chop the larger dry fruits into small, equal-sized pieces.
If the raisins are big, cut them into two pieces before soaking.

Soaking in Alcohol

Wine/Rum/Vodka/Brandy: 1.5 to 2 Cups (use good quality liquor for best results)

Method:

Use dry, cleaned, and sterilized airtight storage bottles for soaking the dry fruits. Glass, ceramic/porcelain containers with tight lids are ideal. Plastic airtight containers also work well. Avoid metal containers as they may react with alcohol.
Place all the cleaned dry fruits in a large bowl. Pour enough wine/brandy/rum/vodka over the dry fruits to cover them completely.
If using a flat container, the process is easier. Tall containers may require more alcohol.
Add some orange/lemon zest along with the dry fruits. Grate the zest just before adding.
Store the soaked dry fruits in the refrigerator and stir the contents every other day to ensure even soaking.
Soak the dry fruits at least a month ahead for the best flavour. The longer the soaking time, the better the flavour.

Soaking in Fresh Orange Juice

Orange Juice: 1.5 to 2 Cups (freshly squeezed works best)

Method:

Soaking in orange juice is ideal for quick soaking (overnight).
Follow the same method as soaking in alcohol, substituting orange juice for the liquor.
Transfer the mixture to airtight glass bottles and refrigerate for at least 10–12 hours.
Avoid long-term soaking as it can make the mixture slightly bitter.
Drizzle a few teaspoons of sugar/brown sugar while soaking in orange juice. Add finely powdered spices if desired.

Soaking in Tea:

Ingredients:

Tea: 1/2 to 3/4 teaspoon
Water: 1.5 to 2 Cups
Sugar/Brown Sugar: Few teaspoons

Method:

Boil the tea leaves with water and sugar/brown sugar.
Strain and allow it to cool.
Pour the brewed tea over the dry fruits.

No Soaking/Instant Soaking Method

If short on time, you can cut the dry fruits, dust them with flour used for baking, and add them to the batter.
Alternatively, soak the dry fruits in alcohol/orange juice/brewed tea for 10–15 minutes before baking.

CHRISTMAS FRUIT CAKES FOR THE SEASON

       CHRISTMAS - a Season filled with Colours, Celebration & good food. Most of us would have been getting ready for the Season with our own fares for Christmas. Maybe it is with presents, decorations or with food - Roasted Turkeys, Baked Potatoes, Christmas Cakes, Puddings, Cookies, Truffles etc., When the Season begins, I usually get ready with the preparation for Cake & Wine. Winemaking starts months before Christmas and as for Cakes, I start a month before by soaking the dry fruits in my home-made Wine. No festival, family function or celebration is complete without these Fruit Cakes in our family, We start the celebration by toasting a homemade Wine and a piece of Fruit Cake.
     Fruit Cakes have a rich heritage and an age-old history, it has been a custom of preparing and consuming this cake from time immemorial. The rich tradition and heritage along with its rich taste have made it a treasured Christmas treat in Christmas and New Year Season. Fruit Cakes are traditionally made with chopped Candied Peels, Dry Fruits, Nuts and Mild Spices. Some recipes call for dry fruits and nuts soaked in spirits like Brandy/Whiskey/Rum/Wine. A cake which has fruits in it has come to be called Fruit Cake. Christmas Fruit Cake/Plum Cake is so synonymous to Christmas Treats around the world. And mostly these cakes are also served during Weddings and celebrations. It is colloquially called by the name Plum Cake in Kerala.

Traditional Christmas Cakes have a lot of pre-soaked fruits in alcohols like Rum, Vodka, Brandy, Wine etc., Rich Fruit Cakes can be prepared in a Boozy, Non-Boozy, Citrusy or even can be flavoured with Tea. So many versions & varieties to suit the glitter and glamour of the so-called Festive Season. I soak the Dry Fruits for the Christmas Cake with my homemade Wines at least a month before. Initially, I started soaking the dry fruits in fresh Orange Juice, then gradually tried my hand with Wines. But yet to try with Rum/Brandy/Vodka.
If you are in short of time, no worries soak the dry fruit just a day before preparing the Christmas Fruit Cake. As such there are no strict rules in what type of dry fruits/nuts/spices we use, the soaker, soaking duration and method of preparation. It all goes with your whims and fancies. Above all convert it to suit your preference and adjust along with your time constraint. What we need is a good Christmas Fruit Cake which tastes and feels good for the Season.

      According to me, Christmas treats should still have the holiday flavours & colours sticking on to the tradition. So I stick onto the family tradition making our all-time favourite Christmas Fruit Cakes for the Season. Mostly I bake these fruit cakes only during Christmas and I would rather stick to a tried-and-tested recipe. This Rich Fruit Cake recipe is what I usually bake for Christmas and was perfected through the years. The alcohol in the cakes ensures they can be kept longer and enhances the taste of the Fruit Cake.
     Whilst I stick onto certain family traditions like Caramelizing the Sugar to Dark Brown in colour for the Christmas Fruit Cake. This gives a dark colour and body to Cake. You can get easy by adjusting the colour by Caramelizing the Sugar to your preference. CLASSIC CHRISTMAS POUND CAKE

     Pound Cake is the oldest way of Baking a Cake that it date backs to the 1700s. Pound Cake the name itself holds the recipe within. Ok, why is it called a Pound Cake? Let's get into the fact - a Pound of Flour, a pound of Butter, a Pound of Sugar and a Pound of Egg(Ya, you heard it right, a pound of Egg). So much of measurement for a cake! That's literally too much! No, the fact is that the measurement for every ingredient remains the same in a Pound Cake. So the ratio lies in your hand. Take it as a Cup or a Kilo keep the ratio same for all the ingredients. It sounds pretty simple. A simple Pound Cake Recipe can be taken as a baseline and converted into quite a lot of variations. Convert it into Chocolatey Chocolate Cakes, Rich Fruit Cakes, Flavoured cakes like Vanilla/Strawberry/Pandan/Banana, Citrusy Cakes with Orange/Lemon... the sky is limit when it comes to the twist of flavours while baking a Pound Cake. It is a foolproof recipe.
     But what I like the most about a Pound Cake is how successful it is at liberating the amateur baker from the strict rules of recipes. I literally started my baking with a Pound Cake Recipe. My MIL's cake recipe for every flavour, a simple Vanilla Cake/ a Chocolate Cake and her default traditional Kerala Plum Cake, for all of the Cake Recipes she follows the Pound Cake formula. Simple, yet rich and moist. This Classic Christmas Pound Cake is our family recipe & my MIL's speciality.

LIGHT FRUIT CAKE

     This Light Fruit Cake Recipe is an absolute treat with a blend of flavours, rich, moist and a wonderful combination of colour & taste in it. If you dislike Rich Fruit Cake, perhaps you should try this Light Fruit Cake. It will change your mind about your distaste for Fruit Cakes.
Fruit Cakes come into the limelight during Christmas, Weddings, Christening and if you are in a mood for a lighter version of Fruit Cakes for certain occasion, this Light Fruit Cake comes handy. This is slightly different from the Traditional dark & rich Fruit Cake. Most of the recipe remains the same except for that, we do not add Caramel in this Light Fruit Cake and as the name calls for LIGHT FRUIT CAKE - we try to keep most of the steps to make this cake light or all the more light coloured. You can also prepare the recipe, by not adding spices if you do not prefer to.
     In this Light Fruit Cake recipe, I have used Brown Sugar as I like my Light Fruit Cake to be in light golden brown in colour, can substitute it with White Sugar/Castor Sugar. Light Fruit Cakes prepared with White Sugar yields light coloured cake. Also, I have not soaked the Dry Fruits in Alcohol/Orange Juice, but have used Orange Juice to alternate between the dry ingredients while mixing the Light Fruit Cake Batter. Alternatively can soak the Dry Fruits in Light Coloured Wine for overnight or up to weeks or months. I have used Light Coloured Dry Fruits like Golden Raisins, Dried Apricot, Peaches, Tutti Frutti, Dried Cranberries and Nuts like Cashew nuts & Walnuts. Dust the Chopped Dry Fruits and Nuts in the Flour used to bake the Cake, this avoids the ingredients getting sunk to the bottom of the cake.

Falooda, this recipe is what I have eaten it as Falooda. My recent mishap with understanding Falooda as the one & only Falooda Drink & the story of Kulfi Falooda.... Anyway, I have always loved to order Falooda and the last time I ate it was in Cochin in 2018. A tall glass of Falooda layered with Rose Syrup, Sabja Seeds in Milk based concoction, a few slices of Kulfi & garnished with copious amount of Nuts & more nuts. This tall glass of Falooda even made me skip my dinner and skipping a meal when in India is a big taboo according to me. The reason being, it would be the only time we would get a chance to succumb to our cravings with local delicacies. But this Falooda made me so full & satiated.

A Falooda recipe has taken its twists & turns and is catered in numerous versions with whims & fancies, it is one special Indian cold drink which masquerades itself as a Dessert too. This Falooda recipe is served as a cold drink layered with Rose Syrup, Sabja Seeds, Falooda Sev/Vermicelli, a thick milk base - sometimes Rose milk or sometimes a sweet thick concoction of Milk & sugar, some recipes even serve it with Rabri/Rabdi. This tall glass of cold drink can be served chilled topped with a hearty dollop of Ice cream/Kulfi. Garnishing Falooda also goes with the whims & fancies - you can garnish it with chopped nuts, dry fruits, fresh fruits, jelly, honey, saffron, rose petals etc., & etc.,

What is the difference between a Kulfi Falooda and a Falooda recipe is that, the Kulfi Falooda is more or less like a dessert which you can scoop out at eat. Whereas this Falooda is a cold drink with a flavoured Milk base. Whatsoever a Falooda recipe should be sinfully rich, decadent and utterly delicious. See... who is explaining the difference between both the recipes. Haa!!! Mistakes happen paa... and it is from where we learn too...

In this Falooda recipe, I have made it with Rose Milk base and have served it with Kulfi instead of Ice cream.

We need the following items to make a Falooda Drink:

ROSE SYRUP

SABJA SEEDS
SWEETENED MILK BASE/ROSE MILK/RABRI/RABDI

NUTS FOR GARNISHING

ROSE SYRUP:

First we would need a Rose Syrup to drizzle all over the base & the Rose Syrup gives a wonderful colour & flavour to this drink. You can use this Rose Syrup to make Rose Milk base.

FALOODA SEV -

FALOODA SEV

Falooda means ‘shredded’ in idiomatic Urdu & it refers to the thin Vermicelli/noodle like ingredient made out of corn flour, which is the integral part of Falooda. Make it from scratch, or we can easily get it incorporated with store-fought Falooda Sev, I was not in any way lucky to get hold of it. And my son was like, why don't you make it from scratch. Me with my lethargic attitude gave a wide smile, convinced him and finally settled with Vermicelli/Semiya. Whatsoever both the ingredients does total justice to the recipe. One main thing to keep in mind is to leave the cooked Falooda Sev/Vermicelli in cold water for a few minutes.

SABJA SEEDS -

The next ingredient we need are the Sabja Seeds/Sweet Basil Seeds/Tukhmaria. A long- awaited ingredient lying safely in my freezer since my last India trip which was in 2019. Soaked it up for about 30-45 minutes and there it was all the items ready to be catered for making a Kulfi Falooda. Soaking Sabja Seeds makes it edible & makes it easily digestible.

MILK BASE - The milk base needed for Falooda drink can be a simple milk & sugar based concoction or, we can get experimental by

VERMICELLI/SEMIYA PAYASAM

ROSE MILK: Making the Base with Rose Milk/Bandung.
RABRI/RABDI: Then if you love to serve Falooda in its utter rich version, then it would be perfect to serve it with Rabri/Rabdi.
VERMICELLI PAYASAM: Or, if you already have Vermicelli Payasam simply add is a base with other ingredients & there you are with a delicious Milk base & here you can also skip making Falooda Sev/Vermicelli.
SWEETENED MILK: Yet another quick-fix version would be to simply mix milk & condensed milk for the Milk base.

ICE CREAM/KULFI - Some Falooda Drink recipes are served topped with a big scoop of Ice Cream or with slices of Kulfi in it. But serving with Ice cream/kulfi are purely optional.

NUTS - Serve Falooda garnished heartily with chopped nuts of your choice. I have used finely chopped Cashew Nuts, Almonds & Pistachios.

GARNISHING - You can get easy with the choice of garnishing a Falooda. Simply serve it with finely chopped nuts or can go to the extent of making it rich & decadent by adding a few strands of Saffron, Rose Petals etc., Some recipes serve Falooda with dry fruits, cut fresh fruits, jelly etc.,

Once all the items are ready, it is time to serve it. Falooda is a cold drink served in layers of Rose Syrup, Falooda Sev or Vermicelli, Sabja Seeds(Sweet Basil Seeds) in a Milk Base, & served topped with Ice Cream/Kulfi and garnished with nuts or dry fruits.

HOW TO MAKE FALOODA

FALOODA

INGREDIENTS:

For Falooda:

Rose Syrup - 2-3 Tbspns

Sabja Seeds - 11/2 Tspn

Falooda Sev - 11/2 Tbspn

Rose Milk/Sweetened Milk/Rabri/Rabdi - 1 Cup

For Toppings:

Kulfi - 1 No.(medium Sized)

Ice Cream - a Scoop

For Garnishing:

Cashew Nuts - a few

Almonds - a few

Saffron - a few strands(optional)

METHOD:

First, take a tall glass for serving Falooda.
Chill the glass leaving it in the freezer for about 5-10 minutes(Optional).
Then, drizzle a few teaspoons of Rose Syrup at the base and all over the glass.
Add a few teaspoons of Sabja Seeds over it.
Then, place a few tablespoons of Falooda Sev/Vermicelli over it.
Gently pour in the Rose Milk/Sweetened Milk/Rabri/Rabdi.
Place a Kulfi over the above ingredients. Can cut the Kulfi into Slices of 2 or 4.
Alternatively can serve it with a scoop of Ice cream.
Now, drizzle some more Rose Syrup over the ingredients.
Garnish heartily with finely chopped nuts of your choice & Saffron Strands.
Serve Falooda chilled, immediately.

NOTES:

For sweetened Milk Base, can simply blend Milk(Boiled & chilled) along with Condensed Milk and use it as a Milk base.
I have added Vermicelli/Semiya in this recipe instead of Falooda Sev. Cook according to the instruction & then once cooked, leave it in cold water for a few minutes.
This is to avoid getting the Vermicelli/Falooda Sev sticking to each other.
Adjust the amount of Rose Syrup to suit your preference.
Garnish Falooda with your choice of Nuts or dry fruits.
Can serve Falooda with fresh fruits/jelly.

For Soaking:

Golden Raisins - 1/2 cup
Dry Apricots/Peaches - 1/4 cup
Dates - 1/8 cup
Candied Peels - 1/8 cup
Glazed Cherries - 1/2 cup
Tutti Frutti - 1/2 cup (Green, Orange & Red)
Dried Cranberries - 1/8 cup
Lemon/Orange Zest - 2-3 Tablespoons
White Wine/ Champagne/ Vodka/ Orange Juice - 1–1.5 cups

Method: Step-by-Step Guide on How to soak Dry Fruits:

Option 1: Soaking in Alcohol:

Chop all the dry fruits, tutti frutti and candied peels.
Place the fruits in a large, non-metallic bowl and pour enough white wine/ champagne/ white rum/ vodka to cover them completely.
Cover the bowl and leave it aside for at least 24 hours, stirring occasionally.
If time permits, soak for a month or longer to enhance flavour.
Use a flat container to minimise the amount of alcohol needed to soak the fruits.
Add more liquor if needed to keep the fruits covered.

Option 2: Soaking in Orange Juice:

Soak the fruits in 1.5 cups of fresh orange juice in an airtight glass container.
Refrigerate overnight or for 10–12 hours (do not soak for too long as it can turn bitter).
Add a few teaspoons of sugar or brown sugar for added sweetness.
Sprinkle in finely powdered spices for enhanced flavour.

Pro Tip: I personally soak all the dry fruits in Homemade Raisin Wine or Apple Wine for at least a year for the best flavour and richness!

For a Light Fruit Cake, use light-coloured fruits like dried pineapple, apricots, peaches and tutti-frutti, glazed cherries, figs, candied peels etc.,
