    Today, I am not just bringing a recipe but a slice of my childhood nostalgia with the Vanilla Milk Cake – a moist, soft, and fluffy creation that takes me back to the days of Krishna Bakery adventures with my brother.  

    A Sweet Journey Down the Memory Lane: Growing up, my brother and I had an avid affair with bakery items, and Krishna Bakery, nestled close to our school bus stop, was our go-to haven. Mom's classic question, "Anything you want from the bakery?" always had us gleaming with delight.

    Vegetable Puffs, Butter Biscuits, Salt Biscuits, Honey Cake, Coconut Bun (Dilkush), Animal shaped Biscuit, Mutta Biscuit, Hot Breads, Cream-filled Cornetto Puffs – the choices were endless. But the star of our whimsical bakery adventures was the Tea Cake, the Vanilla flavoured Cake.

    Now, the eternal question – are tea cakes and vanilla cakes different? Well, the Vanilla Milk Cake I'm sharing with you today brings the best of both worlds. It carries the classic sweetness and aroma of vanilla, making it a true vanilla cake indulgence.

    Yet, its charm lies in the way it harmonizes with a cup of tea – a perfect balance of moist, soft, and fluffy goodness. It's not just a recipe; it's a delightful journey, reminiscent of those Krishna Bakery escapades.

  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • A pinch of Salt
  • 1/2 cup Milk
  • 40 grams of Butter

Method:

  • Prepare the Batter: In a mixing bowl, combine eggs, sugar, oil, and homemade vanilla essence. Whisk with a mixer until the mixture becomes thick and pale.
  • Sift: Sift the all-purpose flour, baking powder & salt together three times. Gradually incorporate the sifted flour into the egg, sugar, and oil batter, folding gently until thoroughly combined
  • Butter-Milk Mixture: Meanwhile, pour milk into a saucepan and bring it to a gentle boil. Immediately, mix in the butter until it's a velvety liquid. Now, stir this magical concoction into your batter.
  • Mix to Perfection: Combine everything together until the batter becomes a smooth. Your kitchen should be filled with the aroma of vanilla, promising a delightful treat.
  • Into the Oven: Pour this mixture into a greased baking tin. Preheat your oven to 170 degrees Celsius and let the magic unfold. Bake for approximately 40 minutes, or until a skewer inserted in the centre comes out clean.
  • Slice of Joy: Once baked to perfection, let your Vanilla Milk Cake cool for a bit. Then, slice into this moist, soft, and fluffy goodness.

  • When infusing butter into the milk, ensure they meld into a seamless, velvety liquid. This step adds richness and moisture to the cake, making every bite a delight.
  • Whisk the eggs, sugar, oil, and the magical touch of homemade vanilla essence until the mixture becomes thick and pale as a vanilla-scented dream.
  • When baking, resist the temptation to open the oven too soon. Let the cake work its magic undisturbed for about 40 minutes, or until that skewer emerges clean from the centre.

This isn't just any fish; it's a symbol of nostalgia, family tales, unique to Kerala backwaters and the joyous flavours of Coastal Kerala.  Owing to the love for Karimeen in Kerala and with the 'upper-middle class' fish which is a favourite with tourists, that it was declared as the state's official fish in 2010

    Picture this – a small stream, a bamboo trap submerged in the water, and the art of catching Karimeen. The tales from my father's childhood days, where the bamboo trap was the unsung hero in this fishing adventure, add a touch of vintage charm to the process. Reminiscing the age-old scenario, the painting proudly displayed at the Grand Hotel at Cochin, fills colours to my visuals, telling stories of tradition and simplicity.

    In this time-honoured technique, the bamboo trap becomes a vessel of connection to the past. It's not just a tool; it's a storyteller, echoing the simplicity and authenticity of Kerala's fishing culture. As I recount the technique used by my father, it's like flipping through the pages of a culinary history book, where each catch carried a tale of patience, skill, and the love for this delectable fish.

We at times add a touch of Kerala Coast in our Christmas lunch spread featuring Fish Curry, Fish Fry, Prawns, an authentic Nadan Thoran, comforting Moru Curry, Curd/Yogurt, and the ever-present Instant Lime Pickle. And if Karimeen Fry is present, it transforms the festive feast into a Kerala Coast extravaganza, adding a dash of coastal allure to our Christmas culinary ensemble.

Ingredients:

Karimeen (Pearl spot fish): 500g, cleaned and gutted
Red Chilli Powder: 1Tablespoon
Turmeric Powder: 1/2 Teaspoon
Black Pepper powder: 1/2 Teaspoon
Garam Masala: 1/2 Teaspoon (Optional)
Ginger-garlic paste: 1Tablespoon
Lemon juice: 1Tablespoon
Curry leaves: A handful
Salt: To taste
Coconut Oil: 3–4 Tablespoons (for frying)

 

Method:

Marination Magic:
  • In a bowl, mix red chilli powder, turmeric powder, black pepper powder, garam masala, ginger-garlic paste, lemon juice, and salt to form a thick paste.
  • Make small slits on both sides of the Karimeen and apply the marination generously, ensuring it seeps into the slits. Let it marinate for at least 30 minutes.

Heat Things Up:

  • Heat coconut oil in a pan. For an authentic Kerala Touch!!!
  • Add curry leaves to infuse that aromatic essence.

Fry 'Em Up:

  • Gently place the marinated Karimeen in the hot oil. Fry each side for about 4–5 minutes, or until it turns golden brown. Make sure it's cooked through but still moist.

Drain and Serve:

  • Once done, place the Karimeen on kitchen paper to absorb excess oil.
  • Garnish with fresh curry leaves, Onion Rings(Optional) and a squeeze of lemon.

  • Freshness is Key: Ensure the Karimeen is fresh for the best taste. Look for bright, clear eyes and firm flesh.

  • Fry perfectly: Fry the Karimeen on medium heat to achieve that perfect crisp without overcooking the delicate flesh.
  • Oil Matters: Coconut oil adds an authentic Kerala touch. The aroma is as important as the taste!

    Eager and inspired, as soon as I returned, I embarked on a delightful journey of infusing these precious beans with Vodka. The anticipation was almost as sweet as the essence itself. The smell of Vanilla beans was so alluring; it lingered in my palms the whole day, a captivating scent I wasn't aware of before. It indeed had an intoxicating aroma.

    I patiently let it sit for a good 6 months, allowing the flavours to meld and intensify.

 Combine Beans and Alcohol:

  • Pour the vodka or rum over the beans, ensuring they are fully submerged.

  • Seal the jar tightly and store it in a cool, dark place for at least 2 months. Shake the jar occasionally to help with the infusion.

Strain and Store:                 
  • After 2 months, strain the liquid through a fine mesh sieve or cheesecloth to remove the vanilla bean particles.
  • Transfer the strained vanilla essence into a clean, airtight bottle.

  • Use your homemade vanilla essence in various Christmas recipes for that extra special flavour!

  • Thinly sliced apples (enough to cover the bottom of the baking tin)
  • 11/2 teaspoons Cinnamon Powder

  • In a heavy-bottomed pan, heat 1/2 cup of sugar over medium heat. Allow it to melt and caramelize, stirring occasionally. Be cautious; caramel can burn quickly.
  • Once the sugar turns a rich golden colour, quickly pour it into the bottom of a greased baking tin. Tilt the tin to ensure the caramel evenly coats the base.
  • Arrange thinly sliced apples on top of the caramel layer. 
  • Sprinkle Cinnamon powder evenly over it & Set aside.

Prepare the Cake Batter:

  • Preheat your oven to 170° Celsius (338 °F).
  • In a mixing bowl, add 2 eggs, 3/4 cup sugar, 1/4 cup oil, and 1 teaspoon of vanilla extract. Using a stand or electric mixer, whisk the mixture until it becomes thick and pale.

Sift and Combine Dry Ingredients:

  • In a separate bowl, sift together 1 cup of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Repeat this process thrice to ensure a light and airy cake texture.
  • Gradually add the sifted dry ingredients into the egg mixture, gently folding them together until well combined.

Prepare the Milk and Butter Mixture:

  • In a saucepan, bring 1/2 cup of milk to a boil. Add 40 grams of butter to the hot milk and stir until the butter is completely melted and incorporated.

Combine Everything:

  • Pour the milk and butter mixture into the egg and flour mixture. Stir until you have a smooth and well-combined batter.

Layer and Bake:

  • Carefully pour the cake batter over the layer of caramelized sugar and apples in the baking tin.
  • Place the tin in the preheated oven and bake for approximately 40–45 minutes, or until a skewer inserted into the centre comes out clean.

Final Touch:

  • Once baked, remove the cake from the oven and allow it to cool for a few minutes.
  • Place a serving plate upside-down on top of the baking tin, then carefully flip the cake onto the plate. The caramelized apple topping should now be on top.

Serve and Enjoy:

  • Slice and serve your Upside-Down Caramelized Apple Cake while it's still warm, ideally with a scoop of creamy vanilla ice cream. The perfect blend of sweet, tart, and caramelized goodness!

  • Even Caramel Coating: Ensure the caramel is evenly distributed across the bottom of the baking tin by gently tilting and swirling the tin after pouring in the caramel.
  • Slicing Apples: Thinly slice the apples for the topping, about 1/8-inch thick, for even cooking and an attractive presentation.
  • Sifting Flour: Sifting the flour and baking powder multiple times may seem tedious, but it's worth it. It results in a lighter and fluffier cake texture.
  • Temperature Accuracy: Use an oven thermometer to verify the accuracy of your oven's temperature. Baking at 170 °C (338 °F) is crucial for achieving the perfect cake texture.
  • Don't Rush the Cooling: Allow the cake to cool in the tin for about 10 minutes before attempting to invert it onto a serving plate. This helps the caramel topping to settle.

Kichadi Vs. Pachadi: A Distinctive Duo:

The Culinary Contours: In the captivating lexicon of Kerala's culinary language, Kichadi and Pachadi emerge as two distinct characters, each contributing its unique hues to the flavour palette. While both are yoghurt-based preparations, they diverge in taste, texture, and tempering clearly depicting Kerala Gastronomy.

    Pachadi and Kichadi are two traditional Kerala Style yogurt based side dishes that are often served as part of a Sadhya, including the Onam Sadhya. While they may seem similar at first glance, there are distinct differences in their preparation, flavour profiles, and ingredients clearly emphasising Kerala's Flavour Spectrum.

    Pachadi is a sweet and sour side dish that is typically made with yogurt, coconut, and fruits or vegetables. The main characteristic of Pachadi is its combination of sweetness and tanginess, which makes it a refreshing and palate-cleansing addition to a meal. The primary ingredients used in Pachadi can vary, but popular choices include pineapple, mango, cucumber, carrot, beetroot, onions, tomato and grapes. 

 

    The fruits or vegetables used in Pachadi are cooked or blanched until they are soft and tender. They are then combined with a mixture of grated coconut and yogurt, which gives the dish its creamy and smooth texture. Pachadi is often seasoned with mustard seeds, curry leaves, green chilies, and sometimes a pinch of turmeric, adding a subtle spiciness to the overall flavour.  Pachadi has a balance of sweet, tangy, and mildly spicy flavours. The natural sweetness of the fruits or vegetables is complemented by the tanginess of yogurt and the aromatic spices, creating a harmonious blend that is both delightful and refreshing.

    Kichadi, on the other hand, is a savoury side dish made with yogurt and cooked vegetables. It has a thicker consistency compared to Pachadi and is often described as a type of raita. Kichadi is well-known for its cooling effect and is often served to balance out spicier dishes in a meal.

    Vegetables like cucumber, ash gourd, pumpkin, okra, bitter gourd are cooked until they are soft and then mixed with beaten yogurt. The dish is seasoned with mustard seeds, curry leaves, green chillies, and sometimes ginger. Kichadi usually has a slightly thicker consistency due to the use of mashed or grated vegetables. Kichadi has a creamy texture with a tangy taste from the yogurt and a mild spiciness from the added seasoning. Unlike Pachadi, Kichadi does not have the sweetness of fruits, and its focus is more on the combination of the cooling yogurt and the gentle heat from the spices.

Our voyage commences with Vendakka, locally known as Okra or Lady's Finger, which takes centre stage in this Kichadi.

    Vendakka Kichadi is more than just a dish; it's an ode to the delicate balance of flavours that defines Kerala's cuisine. Contrary to the sweet-tangy symphony of Pachadi, Kichadi embraces a creamy, milder profile. The velvety amalgamation of yogurt and coconut provides a harmonious backdrop for the earthy richness of Okra. The absence of sweetness and the creamier texture contribute to Kichadi's unique identity.

 "Vendakka/Okra Kichadi: A Creamy Ode to Kerala's Culinary Delights"

Ingredients:

For Vendakka Kichadi:

  • 1 tablespoon Coconut Oil
  • 1/2 teaspoon Mustard Seeds 
  • 1 Dry Red Chilli
  • A sprig of Curry Leaves
  • 1 cup Okra (Vendakka) cut into slices
  • 1 cup Yogurt (Curd) 
  • Salt to taste
  • A pinch of Sugar (Optional)

To Grind:

  • 1/2 cup grated Coconut
  • 1/2 teaspoon Yellow/Black Mustard Seeds
  • 2-3 Green Chillies  
  • A small piece of Ginger

Method:

  • Wash and slice the Okra into thin rounds.
  • Grind coconut, mustard seeds, green chillies, ginger, and a few curry leaves into a fine paste.
  • Mix the coconut paste with yogurt and add salt.
  • In a pan, heat coconut oil and splutter mustard seeds, dry red chilli, and curry leaves.
  • Add sliced okra and sauté until they are tender and stickiness is removed.
  • Then add it to the yogurt-coconut mixture. Cook this on a very low flame for a few minutes or until the raw flavour of the coconut dissipates.
  • Adjust the salt and add a pinch of sugar.
  • Mix well and serve.
